With summer fruits exploding in the markets, it’s no surprise I want to bite right into a juicy, ripe peach. I could bake them into a peach galette or slice them up for a simple salad. And I never forget drinks! Peak season peaches add so much flavor to cocktails it would be sad to overlook them.

Ginger Peach Rum Punch is a refreshing porch sipper. Ripe peaches are mixed with rum, fresh lime juice and simple syrup. Bring it to the BBQ or to your neighbor to hang on the stairs. When ready to serve, top it off with tangy ginger beer and add ice for a succulent summertime cocktail!

Peaches pair well with a variety of liquors, but for this recipe, rum is my liquor of choice. A silver rum, also called white rum, is perfect here. Its bright, clean flavor and aroma of almonds and tropical fruits pairs well with peaches.

Even with rum, this is a low alcohol content (ABV) cocktail as each serving includes lime juice, a touch of simple syrup, and 4 ounces of ginger beer for a bubbly kick.

My tips & tricks

  • Peaches are easier to puree when they’re ripe, and they taste better, too. If you have hard, unripe peaches, give them a few days to ripen.
  • Could you use yellow, white, or donut peaches, or any type of nectarine? Yes, as long as they are ripe! Skip canned peaches as they have added sweeteners or preservatives. Also, they’re not that tasty.
  • Look for ginger beers with more kick than you would normally look for, as the spiciness pairs perfectly with the sweet peaches. I recommend two brands: Reed’s Craft Ginger Beer (try the “extra”) and Blenheim’s Ginger Ale. Both are quite spicy and perfect for that punch.

2 Ways to Serve Ginger Peach Rum Punch

You can serve this cocktail in two ways.

Second option: Mix all the ingredients apart from the ginger beer. When ready to serve, pour the pre-made base into individual ice-filled glasses, then top with the ginger beer. Keep the pre-made base and ginger beer cold on ice for your guests to sip in peace.

I prefer to serve this punch in a 16 ounce mason jar. It has plenty of room for ice and can hold any extra ginger beer you wish to add. It’s a satisfyingly casual way to sip a summer cocktail.

This is a fairly casual drink, so side dishes aren’t necessary. However, a dusting of ground nutmeg or a mint leaf would complement the peaches. Small chunks of peaches float to the top so no additional fruit is needed.

Prepare in time

The peach base, minus the ginger beer, can be made 1 day in advance. Store tightly closed in the refrigerator.

ingredients

  • 2 ripe peachescored, peeled and cut into small cubes

  • 2 cups Silver- rum

  • 3/4 Cup fresh lime juice

  • 1/2 Cup simple syrup

  • 4 cups spicy Ginger ale

method

  1. Muddle the peaches:

    In a medium bowl, combine peaches, rum, lime juice and simple syrup. Use a wooden spoon to lightly mash the peaches, just enough to release some juice. Cover tightly and refrigerate at least 1 hour or up to 1 day before serving.

  2. Add ginger beer and serve:

    When ready to serve, pour the mixture and ginger beer into a large pitcher. Serve the punch over ice in individual glasses and dust with nutmeg and mint leaves, if you like.
