How do you choose a ripe avocado?

Avocados are one of the most popular, nutrient dense, and versatile superfood fruits. However, when it comes to choosing an avocado, there is a short period of time between rock hard, perfectly ripe, and completely rotten. Luckily, this dressing is a great way to use a ripe avocado, or an avocado that’s closer to the end of the spectrum (it gets a little too mushy and brown).

So that you always get the best avocado in the bunch, here are a few tips for your next shopping spree.

  • The most common avocado you will find in your market are Hass avocados. When ripe, these avocados will have dark green, bumpy skin with no bruises or cracks, and should feel soft โ€” but not mushy โ€” when gently squeezed.
  • Another way to tell an avocado’s ripeness is to check the small brown stalk at the bottom. In a ripe avocado, the stalk will fall off slightly revealing light green flesh underneath. However, if the stalk is difficult to remove, the avocado is unripe and if the flesh is brown, it is overripe.
  • If you’re stuck with an unripe avocado, there are a few ways to speed up the ripening process. Try placing the avocado in a brown paper bag along with a banana. The paper bag captures the ethylene gas produced by the banana, speeding up the ripening process.

Tips to achieve the smoothest dressing

Although this dressing is super easy, there are a few tips that will keep this recipe effortless and efficient.

  • While it’s possible to make this dressing by hand, using a blender or food processor will do the entire process for you. Simply add all the ingredients and blend on low speed for a perfectly smooth, emulsified dressing.
  • Make sure you get the liquid out of your limes by choosing limes that are soft to the touch and have a thin, less firm rind. These have more juice and are easier to peel.

Easy adjustments and customizations

Just like its ingredients, this avocado lime dressing is extremely versatile and can be adapted to suit every taste and recipe. It’s also a great base for other citrus-infused dressings, sauces, and marinades.

  • This recipe uses avocado oil to maximize the full avocado flavor. However, if you swap it out for high-quality, unflavored olive oil or a neutral oil like grapeseed oil, you’ll have a delicious dressing.
  • To create a creamier version, add some Greek yogurt, sour cream, or an extra avocado before blending.
  • Switch up your citrus fruits and try a combination of lemons and limes, or add some orange or grapefruit juice to the mix.
  • Using different fresh or dried herbs like dill, tarragon or Thai basil can give this dressing a new flavor profile, making it suitable for a variety of different recipes.
  • For a little spiciness, add a sprinkling of spices like chipotle and cayenne pepper, or throw in a jalapeno pepper or two.

Ways to use avocado lime dressing

While this avocado lime dressing is great on salads, the rich, tangy flavor lends itself to a variety of different recipes. Here are some delicious ideas for using this dressing:

  • Toss your veggies in some of this mix to give them some flavor before grilling, roasting, or steaming.
  • Upgrade your weekday lunch by adding a spritz to any sandwich, burger, wrap or cereal bowl.
  • Make a lighter pasta salad or coleslaw by swapping out the mayonnaise for the creamy version of this dressing.
  • Use as a marinade to add a fresh touch to seafood, chicken, steak or tofu.

Storage Instructions

This dressing can be served immediately or made ahead of time, pour into a tightly sealed container and refrigerate for up to 3 days. If the mixture separates, simply shake or stir to incorporate it again.

If made without the extra cream, this dressing can be frozen in an airtight container, Ziploc bag, or ice cube tray and will keep for about two months.
