ingredients

  • 1 big hate avocadopeeled and cored

  • 2 cups fresh coriander leaves

  • 2 Middle Lemonspeeled and juiced

  • 1 big clove of garlicpeeled off

  • 1 tablespoon agave nectar

  • 1/8 teaspoon ground cumin

  • 1/2 teaspoon sea-salt

  • 1/8 teaspoon ground black pepper

  • 1/8 teaspoon floor White pepper

  • 1 Cup avocado oil

method

  1. Mix the main ingredients:

    In a blender or food processor, combine the avocado, coriander, lime juice, lime zest, garlic, agave, cumin, salt, black pepper, and white pepper.

    Pulse several times to combine. If necessary, scrape down the sides of the blender with a spatula.

  2. Add avocado oil:

    On the lowest level, slowly drizzle in the avocado oil with the knife running. Continue blending until smooth and no chunks of avocado are visible. Adjust the spices as needed.

    For a thinner dressing, add more oil or water to the mixture, 1 teaspoon at a time, until desired consistency is reached.

  3. Store and serve:

    Transfer the dressing to a tightly closed container. Serve immediately or refrigerate for up to 3 days. Mix well before serving.
