Growing up in the heart of the American Midwest, dinner for me and Alex was very “in the box”! At most parties, there was a round plate with 3 main stacks: meat, vegetables, starch. Nothing against the 3 battery plate; It served us very well growing up, from chicken to meatloaf. But after I started eating more plants, the 3-stack plate got a little harder. Because vegetarian foods are generally more integrated than separate components, Alex and I moved to the concept of the meal in a bowl. Most nights our food is spot on put in bowls. And my younger self would never imagine myself this healthy put in bowls could be so addictive I’d forget the 3 battery plate. Read on for this yellow rice bowl recipe.

How to make a bowl of yellow rice

This bowl was inspired by a meal we had at a small place in Minneapolis called Modern Times. Much of the food we eat is inspired by restaurant meals and I knew immediately I had to recreate this one! It was a bowl of brown rice with garlic cabbage, sautéed veggies, and a creamy lemon tahini sauce.

When Simply Organic contacted us to work together on clean eating recipe ideas for the New Year, we decided to create a version of this meal by adding turmeric to the rice to give it a bright yellow color. It turned out beautiful; The light yellow rice pairs beautifully with dark green broccoli and kale. And we added chickpeas for extra protein. To top it off, we used our best hot and creamy tahini sauce. For us, put in bowls isn’t complete without a good sauce, and this tahini sauce is outstanding.

Our recipe for yellow rice (rice with turmeric)

Yellow Rice with Turmeric is very easy to make! Turmeric takes plain brown rice and turns it into a pretty yellow confetti. To make our turmeric rice, all you need is brown rice, turmeric, and kosher salt. Bring to a boil in a saucepan and simmer for 45 minutes. After cooking, let it steam for 10 minutes to allow it to dry out and soften. You could do the same process with white rice, but yellow rice would cook much faster: just about 20 minutes or less.

Not only is turmeric known for its nutritional value, but it is also an excellent coloring agent! So when making this yellow rice, be careful by protecting your counters and keeping your apron handy! One note is that yellow rice can leave residue in the pan after cooking. Simply rinse your pan with hot water and wipe with a cloth and the residue will be gone in an instant!

  1. In a medium saucepan, bring the short grain brown rice, 2 cups water, turmeric, and kosher salt to a boil. Cover and reduce heat to low; Bake 45 minutes. Remove from the stove and let simmer covered for 10 minutes. (After cooking, yellow rice can leave residue in the pan. Simply wash your pan with hot water and wipe with a cloth and the residue will come off immediately.)
  2. Make the best lemon tahini sauce.
  3. Peel and cut carrots. Cut the broccoli into florets. Thinly slice the spring onions; Reserve 2 for garnish. Chop the cabbage. Peel the garlic. Drain and rinse the chickpeas.
  4. In a large skillet, heat 2 tablespoons olive oil with the whole garlic cloves. Add the carrots and sauté for 3 minutes, stirring frequently, then add the broccoli and 2 spring onions and sauté for 3 minutes. Add kale and ¼ cup water and stir-fry 2 minutes, until light green and wilted. Add 1 pinch Kosher salt, the chickpeas and 2 tablespoons soy sauce and cook for another 2 minutes, stirring frequently. Remove from the heat and remove the garlic cloves.
  5. To serve, place the vegetables and rice in a bowl and garnish with the scallions and lemon tahini sauce.

Remarks

*To save time, use white rice and prepare according to package directions, adding the amount of turmeric mentioned above.
