I’ve been seeing homemade flatbread recipes fly by my radar for the past few months, but I hadn’t paid too much attention to them until last week. During this time I was trying to perfect my own whole wheat bread recipe. In a random turn of events, we were inspired to use one for the other. And so a star was born. While my dough wasn’t quite suitable for sandwich bread, it was perfect for pitas. Whole grains added the perfect texture and chew.

We ate this homemade flatbread like crazy – don’t think we’ll be buying from the store again! The recipe seems pretty foolproof; We tried several variants and were successful every time. If you want to try baking homemade bread, pitas are a great place to start. You’ll love how the pita puffs up and makes such a cute little pocket.

How to make flatbread

The first few steps in this homemade flatbread recipe are similar to making a regular loaf of bread. First you mix all the ingredients together until they form a ball of dough. This ball of dough is then kneaded (you can use a food processor or do it by hand) for about six minutes. At this stage the dough should be slightly sticky but not too wet. Let the dough rise for an hour or until it has doubled in size (the microwave is a great place to let your dough rise as there are no drafts, make sure you don’t accidentally turn it on!).

The real fun begins after the dough has risen. You need to divide the dough into eight equal parts and then roll out each section of dough to form a circle. Don’t worry if the flatbreads are oddly shaped; As long as they are thin enough, they cook very well! Bake the pita at about 500ºF for a total of four minutes. Then wrap them in a tea towel as soon as they come out of the oven and let them steam out in a bag. This last step is important because steaming makes homemade flatbread soft and chewy.

How to eat flatbread

Flatbread is incredibly versatile and can be used in a variety of dishes. Here are some of our favorite ways to eat this homemade flatbread:

  • As a pizza crust– Pita pizzas are where they are! We’ve made quite a few pita pizza recipes before, but my favorites are this Tomato Goat Cheese Pita Pizza and this Roasted Pepper Pizza.
  • Homemade Pita Chips– Pita chips are easy to make at home and have a much better texture than store-bought ones. Perfect for dipping in hummus, these za’atar pita chips are a crowd favorite.

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 cup Oats
  • ½ cup wheat germ
  • ¼ cup ground flaxseeds (or grind your own in a coffee grinder)
  • 2 tablespoons vital wheat gluten
  • 2 teaspoons (1 sachet) instant yeast
  • ½ tbsp Honey
  • 1½ teaspoons Salt
  • 1 cup Hot water

  1. In the bowl of a stand mixer, combine all the ingredients and mix with a spatula until a coarse ball forms.
  2. Attach the dough hook to the mixer and turn it to the lowest setting. Slowly increase the speed to medium, adding more water or flour as needed to form a dough ball that is slightly sticky to the touch. Knead at medium speed for 6 minutes. When kneading is finished, remove the kneading paddle. Place the bowl in a warm place, cover with a kitchen towel and allow the dough to double in size, about 1 hour.
  3. Preheat the oven to 500°F, using a pizza stone if you have one.
  4. Divide the dough into 8 equal parts. Shape each section into a small ball. On a floured surface, roll out each ball of dough into a circle using a rolling pin; Make each circle about 1/8″ to 1/4″ thick and 7″ in diameter.
  5. Place the circles of dough on the pizza stone (or on the oven racks). Bake 2 minutes on each side, then flip and bake another 2 minutes. Make sure the dough rises while baking!
  6. Take the pita out of the oven, press the puffed bread together slightly and wrap it in a tea towel while it is still warm. Place the towel in a bag for about 15 minutes to trap the steam and create a naturally soft and fluffy pita.
