Are you a sorbet fan? Then you must try the best dessert of the summer: Watermelon Sorbet! I admit it, we’re chocolate addicts here. But this sorbet is definitely at the height of summer delicacies! Each bite is an explosion of pure, juicy fruit flavor with a smooth, frosty texture. When we made this for our 4 year old he said, “I could eat this every day.” Even better, it’s incredibly easy to mix!

What you need for watermelon sorbet

Skip the store bought stuff because watermelon sorbet is so easy to make at home! All you need are 3 ingredients. In fact, it sounds incredibly simple. Here are the ingredients you need to assemble:

  • ripe watermelon
  • lime juice
  • Sugar

Why is sugar necessary? Well, when you freeze something, it dulls the flavors. You should add just enough sugar for the flavor to come through when freezing. We found this recipe sweetened it just enough to complement the fruit, but not so much that it was intensely sweet.

Equipment needed: an ice cream maker!

An ice cream maker is the best tool for working with sorbet! While you can make sorbets without stirring, the absolute best texture is with an actual ice cream maker. (Trust us!) It’s a great investment as you can make sorbets and ice cream all season long.

Here’s the 2 liter ice cream maker we’re using. It’s also a great gift idea! Use it as a housewarming gift or a fun surprise for ice cream lovers. We’ve had ours for years and it’s holding up well!

The churning: enjoy immediately or freeze for 1 hour

Once you’ve mixed your watermelon, lime, and sugar, you’re ready to stir! It will take about 20-25 minutes for the watermelon sorbet mixture to freeze. Here are some notes on the process:

  • Eat immediately for soft-serve style texture. We love to eat it right out of the ice cream maker! If you’re making it for guests, make it while you’re finishing your meal.
  • Or freeze for about 1 hour for a spoonable texture. You can also put it in the freezer and freeze it for 1 hour. Then it forms balls as you see in the picture.

Preliminary information on the preparation and storage of watermelon sorbet

Here’s the golden rule for watermelon sorbet: homemade sorbet is better the day it is made. Why? Freezing homemade sorbet overnight will freeze it into a firm block. Eat better when it’s coolest! If you want, you can eat the leftovers the next day: we found some tips!

  • Prepare up to 2 hours in advance. It will start to freeze at the edges of the container, so stir well before serving.
  • Leftovers save 1 day but defrost 20 minutes. Mix and match if you like! Leave the container on the counter until it has thawed slightly. You can also give it a few pulses in a blender or food processor to liven up the texture. This will bring it closer to the texture after churning.

  • 6 cups diced seedless watermelon
  • 6 tablespoons Sugar
  • 3 tablespoons lime juice
  • 1 cup Ice

Note: Make sure the base of the ice cream maker is frozen overnight before making this recipe.

  1. Chop the watermelon. Place in a blender and blend until smooth, then add ice and blend again.
  2. Pour the mixture into an ice cream maker and freeze for 20 to 25 minutes. The texture will be icy and creamy at this point. If desired, transfer to a container and freeze for 1 hour to give a harder texture that forms into balls. They can freeze up to 2 hours a day (stir before serving). Freezing overnight results in a very icy texture. If you have leftovers the next day, let them sit at room temperature for about 20 minutes. To improve the texture, you can use a blender or food processor if you like.
