It was such a delicious and easy dinner concept that we planned to share a recipe! What is a poke bowl?

So what is a poke bowl? It’s a Hawaiian dish of marinated raw fish, usually ahi tuna, cut into cubes and served in a bowl with rice, surrounded by vegetables and savory sauces. Poke is pronounced “poke-ay” and means “cut or cut” in Hawaiian: in reference to sliced ​​fish. Bowls are ubiquitous in Hawaii and you can get them anywhere from gas stations to grocery stores to restaurants.

The poke bowl is now having a moment here in the continental United States, and you can even find poke bowl restaurants right here in our hometown of Indianapolis, Indiana! Because poke bowls are a fairly free-form concept, there are many variations on how they are prepared. This salmon poke bowl is a twist with seared salmon instead of raw tuna. A note on buying sustainable seafood

Alex and I try to buy sustainable seafood whenever possible (we eat mostly plant-based but occasionally eat sustainable fish). While researching how to buy sustainable seafood, Alex and I learned look for wild fish.

Also, frozen is good too! One myth about fish is “fresh is better”. As soon as an animal dies, it begins to decompose; Freezing suspends this process. If a fish is frozen when you catch it and stays frozen until it gets to your kitchen, it’s of higher quality than a raw fish that took a week to get to your plate.

How to make this salmon poke bowl

Alright, here’s how to do a salmon stitch! As we mentioned above, most poke bowl recipes use sushi-grade raw ahi tuna that’s diced (which is very, very tasty). But for our Pan-Seared Salmon Poke Bowl, here’s how:

  • Fry the salmon. Marinate the salmon and then sear it in a very hot pan for a minute. You simply cut the salmon into squares, then marinate it in soy, toasted sesame oil, and some hot sauce while you prep the veggies. Then it is literally cooked 30 to 45 seconds: Talk about quick dinner recipes!
  • Prepare the vegetables: The veggies in this Poke Bowl with Salmon are simple – they’re all organic veggies that we have at ALDI. Each veg is cut differently and seasoned differently for a little variety!

This delicious Salmon Poke Bowl features seared salmon and veggies in one colorful bowl, an easy dinner idea perfect for weeknights or parties!


  • 1 ½ cups Simply plain dry white rice or organic quinoa
  • 4 Fremont Fish Market Wild Salmon* Medium fillets
  • 5 ½ tablespoons Soy or tamari sauce, shared
  • 1 tbsp toasted sesame oil, divided
  • 1 teaspoon Sriracha
  • 1/4 medium red cabbage (2 cups shredded)
  • 1 large English cucumber (3 cups shredded)
  • 3 medium carrots
  • 1 Lawyer
  • 3 Green Onions
  • 2 ½ tablespoons rice vinegar
  • ½ teaspoon Sesame seeds (or toasted sesame seeds), plus more for garnish
  • 1 tbsp Simply natural organic coconut oil
  • Kosher salt

  1. Prepare rice or quinoa using our Quinoa Method (see video below), Instant Pot Quinoa, Instant Pot Brown Rice, or Instant Pot White Rice.
  2. Lay the salmon flat on a cutting board and insert a sharp knife between the skin and meat to remove the skin. Cut the salmon into 1 inch squares and place in a medium bowl. Note that the thinner parts of the salmon may fray a bit (it’s okay). Add ¼ cup soy sauce, 1 teaspoon toasted sesame oil and the sriracha to the salmon and stir gently. Let it marinate while you prepare the veggies.
  3. Thinly slice the cabbage (2 cups). Place in a medium bowl and mix with ¼ tsp kosher salt and 1 tbsp rice vinegar.
  4. Julienne the cucumber into long thin strips (3 cups; we used a julienne peeler). Place in a medium bowl and toss with 1½ tablespoons rice vinegar, 1½ tablespoons soy sauce, and 1 teaspoon toasted sesame oil.
  5. Using a vegetable peeler, peel the carrots into long strips. Place in a medium bowl and toss with 1 tsp toasted sesame oil, ⅛ tsp kosher salt, and ½ tsp sesame seeds.
  6. Dice the avocado (if using). Cut the spring onions diagonally.
  7. Heat the coconut oil in a large skillet over high heat. When hot, add the salmon and cook until just cooked through, about 30-45 seconds. Immediately transfer to a clean bowl and add the spring onions, a pinch of sesame seeds, and 1 or 2 pinches of kosher salt.
  8. To serve, place rice or quinoa in bowls, then garnish with greens and salmon. Garnish with additional sesame seeds if you like.

*If salmon is frozen, thaw per package directions before beginning.
