Not only is it hearty and delicious, but it is unbelievable easy to do. Here we used a trick to replace the traditional ham shank and add a smoky undertone to this vegetarian split pea soup. How to make a vegetarian pea soup

Of course, the easiest way to make a vegetarian split pea soup is to buy a bag of split peas with a flavor pack and just add water. But as we experimented with our own recipe, we found that simply adding sautéed onions and garlic to a veggie broth base makes for great flavor. We also added some liquid smoke to mimic the ham that usually flavors the soup.

Cooking the peas in this soup causes them to break down into a thick, stew-like texture. We mixed our vegetarian split pea soup a little after cooking with an immersion blender, but not too much – we like to keep it quite thick.

If you don’t have liquid smoke, you can also omit it or try adding a pinch of chipotle powder instead. Chipotle powder is spicy yet smoky; You won’t need much, but if you’re craving that ham and smoky flavor, this will do. If you like, you can garnish with smoked paprika, which also adds a subtle smoky touch to this dish.

Serve this vegan and vegetarian split pea soup with crusty bread, cookies (or vegan crackers), or a simple side salad for a complete meal. This recipe makes four large servings, so make sure you have enough to eat.

  • 1 yellow onion
  • 4 carrots
  • 4 Garlic cloves
  • 2 tablespoons olive oil
  • 1 pounds of peas
  • 8 cups vegetable soup
  • 1 teaspoon liquid smoke
  • Kosher salt
  • Ground fresh pepper

  1. Chop onion and carrot. Chop the garlic. (If you have a pressure cooker, go to Instant Pot Split Pea Soup for the next step.)
  2. In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add onion and carrot and sauté for 2 minutes. Add the garlic and peas and sauté for 1 minute.
  3. Add the vegetable broth. Bring to a boil, then simmer 45 to 55 minutes, until peas break down and soup thickens. If desired, puree several times with an immersion blender for a smoother but still thick texture.
  4. Stir in liquid smoke, kosher salt, and freshly ground pepper. Garnish with smoked paprika if you like.
