It is a Special occasion recipe with every pan dirty, where your kitchen will look like a tornado when you’re done. (At least for us.) While this might be called easy, it really is not fast. This Veggie Shepherd’s Pie is definitely worth ending with a cozy and creamy parmesan mashed potato over the tastiest and most delicious lentils. Our goal is to show that holidays can be tasty and healthy and that you don’t have to leave the table with a stomach ache. How to Make Vegetarian Shepherd’s Pie

This vegetarian shepherd’s pie is the star of our Thanksgiving range, but of course it can be made anytime! It’s perfect for a fall or winter main course. Shepherd’s pie is usually a base of meat and vegetables, topped with mashed potatoes. For this vegetarian shepherd’s pie, we replaced the meat with French lentils and umami flavors like miso and soy. It’s worth finding miso at your grocery store if you don’t have it on hand. it imparts a savory meat flavor to vegetables.

Delicious Vegetarian Shepherd’s Pie is a savory pie recipe filled with French lentils and vegetables and topped with parmesan mashed potatoes.


  • 2 pound russet potatoes
  • ½ teaspoon chopped fresh rosemary, plus extra for garnish
  • 1 cup milk
  • 2 tablespoons butter
  • ¼ cup sour cream
  • 1 teaspoon black pepper, divided
  • 1¼ teaspoons kosher salt, shared
  • ½ cup grated parmesan cheese, plus extra for garnish
  • 1 pound french lentils (2 ¼ cups)
  • 1 large yellow onion
  • 3 medium or 2 big carrots
  • 1 celery
  • 3 Garlic cloves
  • 2 tablespoons olive oil
  • 1 cup vegetable soup
  • 6 tablespoons miso
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 cup frozen corn kernels
  • 1 cup frozen peas
  • 1 teaspoon dried sage

  1. Bring a large pot of water to a boil. Peel the potatoes, then dice and place in a bowl. Chop the rosemary very finely, making sure it is as small as possible; Set aside a small additional amount (about ⅛ teaspoon) for garnish. Once the water is boiling, slide the potatoes into the water and cook until tender (test with a fork), 10 minutes. Drain the potatoes and put them back in the pot. Mash the potatoes, then add the milk, butter, sour cream, ½ tsp black pepper, 1 tsp kosher salt, ½ cup grated parmesan and fresh rosemary. Put aside.
  2. Meanwhile, place the French lentils in a large saucepan or saucepan with 6 cups of water. Bring to a boil, then simmer for 25 minutes until tender. Pour off excess liquid.
  3. Chop 2 cups of onion. Peel and cut carrots. Dice the celery and chop the garlic.
  4. Preheat the oven to 400F.
  5. In a very large pan, heat the olive oil. Add onion, carrot and celery and sauté 5 minutes until onion is translucent. Add the garlic and sauté until translucent, 1 minute. Add lentils, broth, miso dissolved in ½ cup water, balsamic vinegar, soy sauce, corn, peas, sage, ¼ tsp kosher salt, and ½ tsp black pepper. Bake for 10 to 12 minutes, until most of the liquid is cooked but the filling is still moist.
  6. Place the lentil filling in a 9×13-inch pan, then use a spatula to spread the mashed potatoes over the lentils in a smooth layer. Garnish with a thin layer of parmesan and reserved rosemary. Bake 25 minutes. If desired, grill for a few minutes until the top is golden brown. Serve hot from the oven.
