At the risk of repeating myself, I’ll repeat something I often repeat: I’m not a born chef. Four years ago I had no idea what quinoa was. Six years ago I couldn’t even boil a pot of water to make pasta (true story). A change came when Alex and I got married and wanted to invite other people to dinner. Our first meal was a bit rough but luckily our guests were polite! Gradually we kept learning and exposing ourselves to people who were really, really How be in the kitchen. It was contagious. A defining moment was when we read a book with the title food problems who challenged us to think about our eating habits. Long story short, we’re committed to eating all real, unprocessed foods and started this blog to talk about it. Read on to learn more about real food and this veggie quinoa burger recipe!

I say all this to introduce Lisa Leake. As a mother of two, she experienced a similar turning point a few years ago when she read Michael Pollan In defense of the food, which prompted her and her family to take on the challenge of eating real food for 100 days. It changed her life and she now shares all things real food on her hugely popular blog, 100 Days of Real Food.

There are many misconceptions when it comes to healthy eating. What I hear a lot is that you have to be some kind of natural kitchen god or goddess who has been cooking since kindergarten. The good news: It’s not true. I think Lisa would agree if I said that we’re just regular people who have heard about a different way of eating and started to be passionate about it. We’re not the best chefs or amazing gastronomic masters; We grew up using Easy Mac instead of kale. But we loved eating honest, tasty and genuine food.

How to make these veggie quinoa burgers

These veggie quinoa burgers are from Lisa’s new book, 100 Days of Real Food. We’ve had trouble with veggie burgers in the past but these have turned out fantastic. If you’ve never made veggie burgers or donuts, frying takes some practice, but it’s worth it. The main idea is to make quinoa, combine it with eggs, cheese, and sautéed veggies, and then shape into patties. Then fry the patties in a little oil until they are slightly golden and crispy! These quinoa burgers turned out juicy and delicious! Burgers keep in the fridge, so we ate these quinoa burgers several days after making them.

These delicious quinoa burgers are easy to make and keep well in the fridge for several days. Top with hummus and avocado and dig in!


For the quinoa burgers

  • 1 cup raw quinoa
  • 2/3 cup grated sharp cheddar cheese
  • ¾ cup chopped carrot (2 at 3 carrots)
  • ⅓ cup chopped onion
  • 3 Garlic cloves
  • 2 eggs
  • ¼ cup whole wheat flour
  • ¾ teaspoon cumin powder
  • ¾ teaspoon kosher salt
  • 3 tablespoons raw sunflower seeds
  • 2 tablespoons olive oil

Serve


  1. Cook quinoa according to the main recipe: Perfect Quinoa or Instant Pot Quinoa.
  2. In the bowl of a food processor, add the carrot and chop enough to make ¾ cup. Remove and add the onion and chop enough for ⅓ cup. Remove and add 3 peeled garlic cloves; mix until chopped.
  3. When the quinoa is cooked, mix all the ingredients except the oil in a large bowl. Using wet hands, shape the quinoa mixture into 8 patties, about 1 inch thick, and place on a clean plate or cutting board.
  4. In a large skillet with a tight fitting lid, heat the olive oil over medium-low heat. Add burgers to skillet, cover and cook until bottom is golden brown, 6 to 8 minutes. (Covering the pan ensures the burgers cook through in the center without overcooking the outside.) Flip the burgers and repeat the process, adding another tablespoon of oil if necessary (the pan should not be dry) . If necessary, fry in several batches and let cool for a few minutes so that they firm up.
  5. Serve hot topped with hummus and avocado and wrapped in or on large lettuce leaves.
