The other day I came across the quote: “Practice being kind to yourself in small, concrete things.” (It’s part of a book I’m reading about creative renewal, which I highly recommend.) It might be a bit cliche, but it got me thinking. The challenge here is simply no excuse for complacency friendly. do you eat well do you have socks A new houseplant? Have you dealt with loneliness and reflection on a daily basis?

Even for dedicated home cooks, Alex and I, thoughtful, nutritious meals are the first things to eat when time is of the essence. There is something comforting about a carefully prepared meal. Friendly. That’s where this vegetarian Cobb salad comes in! It’s not rocket science, but something about this beautifully composed salad looks like a treat just by looking at it. And that’s before you’ve tasted the flavors…! Ready to dig?

What’s in a Vegetarian Cobb Salad?

Cobb Salad is a well-known, crisp and hearty main course salad. It typically includes chicken, bacon, hard-boiled eggs, and avocado, served on veggies with crumbled blue cheese and a dressing. But since Alex and I mainly eat vegetarian and plant-based food, we wanted to create a vegetarian version. Luckily, this turned into a fresh and healthy version that we love even more than the original! Here’s what we included in our Vegetarian Cobb Salad:

  • Chickpeas instead of chicken! Of course, chickpeas only resemble chicken in the first 5 letters of the word! But they’re a great source of plant-based protein, so add them in for the salad topping.
  • Hard boiled eggs. No Cobb salad is complete without eggs! Here’s our failsafe method.
  • Vegan Coconut Bacon! The star is the coconut bacon: smoky, crispy and rich. If you prefer a different kind of vegan bacon, try our shiitake bacon or our tempeh bacon.
  • Blue cheese crumbles. It’s traditional in this salad and adds just the right amount of bold flavor.
  • Avocado, spring onion and green vegetables. Top off with avocado and crunchy veggies.
  • Red Wine Vinaigrette. Pour a tangy red wine vinegar vinaigrette on top.

Serve the Cobb Salad!

This salad has a few ingredients to make, but making a few ahead of time makes it easy to put together and a fantastic flavor combination. It hardly tastes like a salad, the flavors are so bold and bright, not to mention the colorful visuals! It’s perfect as a main course salad for meatless Mondays or any day of the week.

For a little cuteness, Alex and I treated ourselves to a Cobb salad and a glass of chilled rosé on the porch the other night. It was Then well worth the extra time and effort. And then I read a book instead of my usual evening work. (Take that, workaholic.)

For the vinaigrette

  • 4 tablespoons red wine vinegar
  • 6 tablespoons olive oil
  • 1½ tablespoons Dijon mustard
  • 1 teaspoon Honey
  • 1 teaspoon Worcestershire sauce (vegetarian or vegan)
  • ¼ teaspoon kosher salt
  • Freshly ground pepper

For the Cobb salad

  • ½ cup coconut bacon
  • 4 hard boiled eggs
  • 15-oz can of chickpeas (or 1 ½ cups cooked)
  • 1 tbsp olive oil
  • ½ teaspoon kosher salt
  • 1 head of romaine lettuce
  • 1 Bibb Lettuce
  • 2 ripe tomatoes
  • 3 Green Onions
  • 1 Lawyer
  • 1 ounce crumbled blue cheese

  1. In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, honey, Worcestershire sauce, kosher salt, and freshly ground pepper vigorously until a creamy emulsion forms. shape.
  2. Prepare the coconut bacon.
  3. Prepare hard boiled eggs with Perfect Hard Boiled Eggs, Steamed Hard Boiled Eggs or Instant Pot Hard Boiled Eggs.
  4. Drain and rinse chickpeas; In a small bowl, toss with 1 tbsp olive oil and ½ tsp kosher salt.
  5. Wash lettuce and cut into small pieces. Slice the tomatoes. Cut the spring onions into thin slices. Chop the avocado. Quarter the eggs.
  6. To serve, place the vegetables on a plate or in a bowl. Garnish with eggs, tomatoes, onions, avocado, chickpeas, blue cheese and coconut bacon. Drizzle with vinaigrette and serve.

Remarks

Preparing the coconut bacon, hard-boiled eggs, and/or dressing ahead of time saves a lot of time. Store leftover coconut bacon in a sealed bag in the freezer. it thaws in seconds.
