But here we are, and healthy plant-based eating has become a lifelong passion for me.

How to make this vegan black bean burger

This vegan black bean burger was created especially for our gluten-free oatmeal friends at Bob’s Red Mill. And it’s still one of our favorite vegan recipes to this day! The trick to making a vegan black bean burger recipe is finding a binder that avoids the eggs or breadcrumbs used in many typical veggie burgers. Here we used sweet potatoes, which turn into a fantastic goo, and oats for some texture.

For the flavor, we took inspiration from a recent visit to an amazing Japanese restaurant in Santa Fe. We used soy sauce and mirin to simulate a teriyaki flavor in the burger, and some sautéed shiitake mushrooms are the perfect topping. Add a little sriracha mayonnaise for a killer combo. Or of course, if you want to load up on teriyaki, you can coat the whole burger in our easy homemade teriyaki sauce! Or you can go a different direction with homemade barbecue sauce.

If you’re gluten-free, feel free to serve this vegan black bean burger on a gluten-free English muffin. If you’re vegan, use vegan mayonnaise. It turns out very tasty, with the perfect texture: one of our best bean recipes!

This vegan black bean burger is baked (not grillable – here’s our grilled veggie burger). The preparation takes about 1 hour. For us, the effort was worth it. We made them on the weekends when we had a little more time and they made great leftovers. Feel free to double the recipe and freeze leftovers for quick meals too. For the black bean burger

Substitute for the shiitake mushrooms *or the shiitake bacon

  • 4 Shiitake mushrooms
  • 1 drizzle each with olive oil, mirin and soy sauce

Serve


  1. Preheat oven to 375°F.
  2. Wash the sweet potato and prick with a fork. Microwave until cooked through, about 8 minutes, turning halfway through. Open and let cool until the vapor evaporates and it is cool to the touch.
  3. Place the rolled oats on a cutting board and use a knife to roughly chop them for a blended texture. Cut the spring onions into thin slices. Drain and rinse beans.
  4. In a bowl, combine onions, oatmeal, beans, sunflower seeds, kosher salt, garlic powder, smoked paprika, soy sauce, and mirin. Mix with your hands and lightly mash the beans with your fingers. Add ½ cup sweet potato and mix everything together.
  5. Line a baking sheet with parchment paper. Shape into 4 patties and place on the baking sheet. Fry on one side for 20 minutes, then flip and broil on the other side for 20 minutes. Cool slightly before serving.
  6. Remove the stems and slice the shiitake mushroom caps. In a small skillet, add a drizzle of olive oil, mirin, and soy sauce and sauté the mushrooms until tender, about 1 minute.
  7. Prepare the spicy mayonnaise.
  8. To serve, layer the burgers on toasted English muffins and top with mushrooms, spicy mayonnaise and alfalfa sprouts.
