  • ¼ cup all purpose flour
  • 2 ½ tablespoons Sugar
  • ¼ teaspoon baking powder
  • 1 small pinch of salt
  • 3 tablespoons Milk (or plant-based milk for vegans)
  • 2 tablespoons melted unsalted butter (or neutral oil or coconut oil for vegans)
  • ½ tbsp vanilla extract

  1. To mix together: Combine the dry ingredients in a microwave-safe 8- or 12-ounce mug. Add melted butter, milk and vanilla. Mix well until you get a smooth paste.
  2. Microwave: Place a paper towel under the mug in the microwave, then microwave on high power for 60 seconds. Check if it’s done: if it’s still sticky and wet on top, cook for another 20 seconds, then another 10 seconds. It’s done when the top looks cooked and springs back to the touch; If it’s still sticky, try another 10 second burst. The exact timing depends on the microwave: ours works well with 60 seconds, then another 30 seconds.
  3. Cool: Important: Wait about 5 minutes for the cake to cool from very hot to hot. Don’t try it right away: it doesn’t taste good. But cooling down for a few minutes will do! Garnish with whipped cream, ice cream or strawberry puree and serve hot.
