What is the best condiment for oven fries? We tried about a million spices. But we ended up narrowing it down to this delicious spice mix:

  • Smoked Peppers: The Spanish version of paprika that imparts a hint of smoke with every bite. If you buy a jar, you can use it with these best smoked paprika recipes.

  • 2 large red potatoes (1 1/2 to 1 3/4 Pound Sterling)*
  • 2 tablespoons olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon Old Bay Seasoning (store bought or homemade)
  • ¼ teaspoon ground black pepper
  • ½ teaspoon kosher salt

  1. Preheat the oven to 425 degrees Fahrenheit. Space oven racks evenly to ensure even baking.
  2. Meanwhile, cut the potatoes into fries: (Watch this video or use a chip cutter.) Wash the potatoes, leaving the skin on. Cut off the ends of each potato, then cut off part of the side to form a bottom. Lay the half-cut potato side down and slice a 3/8-inch slice, then set the slice on its side and cut into several long strips. Repeat until all potatoes are cut into fries. The pieces may be uneven, but aim for as uniform a thickness as possible. Watch the video for the full instructions!
  3. Soak in cold water (10 minutes): Place the sliced ​​fries in a medium bowl and rinse under cold water until the water runs clear. Then fill the bowl with cold water and leave for 10 minutes (while the oven preheats). Then drain the potatoes and pat dry with a clean towel.
  4. Seasoning fries: Place the fries in a dry bowl and toss with olive oil, smoked paprika, garlic powder, Old Bay, black pepper, and kosher salt. Line two baking sheets with parchment paper. Spread the fries out on the paper in straight lines and space them as widely as possible.

Remarks

*That makes a good amount of fries, but a lot less than a restaurant serving (it’s as expected!). The largest amount of fries that will fit on two baking sheets is 2 pounds, feel free to increase this amount if needed (adjust seasonings accordingly).
