Truffled Egg with Smoked Salmon 038 Greens

No meal is easier or more delicious than smoked salmon with eggs (truffle eggs!) and lots of veggies. Even better, it’s brain food!

How easy it is to go where we are not: sipping margaritas on a crystal clear beach. To have a better job in a more exciting city, in a brighter life, where people don’t get angry and there are no bad days and the weather is nice every day. But here in real life there are simple tasks necessary for life. Like keeping your kids alive. dental floss. Pay bills. Getting an oil change (even typing it makes me cringe). Traffic jams. Loving hard-to-love people.

Something in the human heart makes it easy for dissatisfaction to seep into everyday life. What if the things that are part of everyday life, the things that need to be done, could also be things we love? Learn to love the process

As fundamental as it is for our soul to wish for something better and brighter, perhaps the simple shift in perspective in this quote could be put into practice. And indeed I believe it is possible: up until 8 years ago, the simple daily task of preparing food was an absolute chore. To hate is not too strong a word for it (people in my life at the time can attest to that). There was nothing I was less interested in than preparing food and I hated having to do it multiple times a day.

Long story short, people came into my life who loved it: they loved the process, the shopping (what?!), the cooking, the conversations and breaking bread together. This daily chore could actually be…gulp, fun? The moment I started opening my mind, my life changed forever. Joy is born in this simple daily task. Not that every day is rosy, but I’ve learned to truly love myself and others.

What is brain food?

And with that in mind, here’s a smoked salmon egg recipe that’s so easy to put on the nutritious and stylish dining table, you’ll just love it. You may have read our recent brainfood podcast with Dr. Drew Ramsey (or listen to 50 Shades of Brain Food). He is a psychiatrist and an expert on how the food we eat can affect our mental health. Basically, when we eat a colorful, nutrient-dense diet, rather than the typical American brown and white diet, we can fight things like depression and anxiety and fuel our brains. Pretty strong stuff.

dr Ramsey has a little rhyme for good brain food: Seafood, green vegetables, nuts and beans. This smoked salmon recipe includes the first two. Occasionally we change our mostly vegetarian diet to eat fish and meat, and smoked salmon is in both Alex’s and my hall of fame for top-notch treats. The description

No meal is easier or more delicious than smoked salmon with eggs – eggs with truffles! – and lots of greenery. Even better, it’s brain food!


  • 1 tbsp olive oil
  • 4 pasture eggs
  • 2 teaspoons truffle oil
  • 1 teaspoon paprika
  • 1 shallot or 1/2 red onion, thinly sliced
  • 8 ounces cress
  • 2 tablespoons Balsamic or apple cider vinegar
  • 8 ounces smoked salmon

  1. Brush a large skillet with half the olive oil and heat over medium-high heat. Crack the eggs into the pan, drizzle with truffle oil and sprinkle with paprika. Cook for 3 to 4 minutes, until the whites are cooked but the yolks are still soft.
  2. While the eggs are cooking, prepare the watercress. Brush a separate large skillet with the remaining olive oil. Add the shallot or onion and cook until the shallot softens, 2 to 3 minutes. Add watercress and cook until tender, 1 minute. Drizzle with vinegar.
  3. Divide the mixture among four plates and top each with an egg and 2 ounces of smoked salmon. Serve immediately.
