Here’s a sauce that will add a touch of indulgence to everything it touches: Aioli with truffles! This delicious dip is rich and creamy, with earthy notes of truffle and hints of zesty garlic. It only takes a few minutes to prepare and tastes good with literally everything: Perfect with chips, grilled fish, roasted vegetables or even on a sandwich. For two truffle lovers like us, we are completely charmed.

Truffle Aioli Ingredients

Aioli is a sauce that comes from southern France and Spain. A traditional aioli is made from garlic mixed in a mortar and pestle with egg yolk, lemon juice or vinegar and olive oil. Americans have been calling flavored mayonnaise “aioli” since the 1990s. Mayonnaise is very similar: it is made only with canola oil and no garlic. So many flavored aioli are made from mayonnaise.

This truffle aioli recipe uses a mayonnaise base because it’s the quickest way to make aioli at home. Of course, if you like, you can also prepare them using the traditional aioli method! What you need for the basic recipe:

  • High quality mayonnaise: Quality really makes a difference here! We love a mid-range mayonnaise like Sir Kensington’s
  • 100% natural truffle oil: the key to taste! See below
  • Garlic
  • Salt

Important: find natural truffle oil

Some chefs have historically turned their backs on truffle oil because many brands available to consumers were synthetic. The synthetic oil flavor mimics black truffle, but it’s an extremely strong and artificial flavor. In recent years, however, there are finally good, all-natural truffle oils on the market.

  • Natural truffle oil is made from pieces of real truffle and is not synthetic. The taste is much milder and tastes “real”.
  • Our favorite natural truffle oil? TRUFF truffle oil (we are not affiliated). It has a bold, rich essence and is the finest all-natural oil we’ve worked with.
  • Many truffle oils in grocery stores are synthetic. Look on the back of the bottle for the list of ingredients. If real black truffle is not listed, it is not natural truffle oil. What if you could only find synthetic truffle oil? Use it, but start with half the amount, then add more to taste.

Other ways to add truffle flavor

Another way to flavor a truffle aioli? Preserved truffles and mushrooms. These Urbani truffle and mushroom preserves contain real truffle flavored mushrooms. We found it at our local grocery store and the flavor is intense and irresistible. This would add chunks of real mushrooms and real truffles to your aioli: which has a different visual effect but is still delicious. Start by adding 1 teaspoon, then more to taste.

  • ½ cup high-quality mayonnaise (or vegan mayo for vegans)
  • 1 Garlic clove, grated
  • 1 teaspoon purely natural truffle oil or to taste with a synthetic truffle oil (Important! See Note)*
  • Freshly ground black pepper, optional (to taste)

  1. In a medium-sized bowl, mix all the ingredients. Taste and add a little more truffle oil if you like. Can be kept in the fridge for up to 2 weeks.

Remarks

*All natural truffle oils like TRUFF have the best taste. Synthetic truffle oils have an artificial and very strong taste. If you buy truffle oil that doesn’t say “natural flavor” anywhere on its packaging, it will be stronger. Use half the amount indicated, then more to taste.
