As you can imagine, toddlers that are crispy on the outside, fluffy on the inside are just the thing to load up on nacho toppings. This recipe for totchos is our favorite way to make them: topped with black beans, corn, pico, guacamole, sour cream, and lots of cheese. Here are the tips on how to make your own pan of Tater Tot Nachos!

What are tochos?

Nachos Tater Tot, also known as totchos, are nachos with Tater Tot replacing tortilla chips. Mix up toppings while toddlers cook and you’ve got a hearty appetizer or even dinner. It’s unclear who invented speedometers, but they captured the imagination and you can now find them on restaurant and bar menus.

We first tried totchos years ago at a restaurant in Montana! At a table with my family and microbrew mugs, we experienced the magic of totchos: crispy hash browns with black beans, mashed avocado and a white queso sauce. Between the “Mmmm’s,” Alex and I locked eyes. We have to try this at home.

This totchos recipe is a model idea: like standard nachos, you can load them with just about anything you like. This topping list is the combination of ingredients we love. One thing to remember: you want a good contrast between dry and sticky ingredients. In our opinion, the guacamole steals the show and reigns supreme here. You need this for the tater tot nachos:

  • frozen taters: Look for a high-quality brand with ingredients that are as natural as possible! Our favorite is Alexia (or try homemade tater tots if you’re feeling adventurous)
  • Black beans
  • Spices: garlic powder, chili powder, cumin
  • coriander
  • Red onion and spring onion
  • Jalapeno chilli
  • Mexican grated cheese mix
  • Pico de Gallo
  • Corn
  • guacamole
  • sour cream (or vegan nacho cheese or cashew cream)

Tips for serving this totchos recipe

Totchos is a very simple concept, but there are a few things to keep in mind with this recipe.

  • Use 1 pound or 1 ½ pounds. The capacity should be up to 1½ pounds, so use more if you expect big appetites.
  • Prepare toppings while toddlers bake. You’ll want to serve the little ones right away when they’re hot, so take the opportunity to chop and piece everything together.
  • When getting creative with toppings, be sure to balance sticky textures with dry textures. The morsels and melted cheese will dry on their own, so be generous with the dollops of guacamole and sour cream to carry the dish. Or use a queso sauce! See below.

Notes on tater tot vegan nachos

Tater Tots are naturally vegan, so converting this recipe to a dairy-free or vegan recipe is easy! Here’s what to do:

  • leave out the cheese
  • Use cashew cream or vegan nacho cheese instead of sour cream. We highly recommend the nacho cheese as it helps add the savory, cheesy flavor. If you don’t have time to make it at home, Siete Foods also sells a great vegan queso.

  • 1 at 1 1/2 pound frozen potatoes
  • ¾ cup Canned black beans, drained and rinsed
  • ½ teaspoon olive oil
  • ⅛ teaspoon garlic powder and chili powder respectively
  • ¼ teaspoon every cumin and kosher salt
  • 1 tbsp finely chopped coriander
  • ¼ cup finely diced red onion
  • 2 Spring onions, thinly sliced
  • 1 Jalapeño pepper, thinly sliced ​​(optional)
  • 1 cup Mexican shredded cheese mix (omit for vegans)
  • ½ cup Pico de gallo, drained (or finely diced tomato and red onion)
  • ¼ cup Canned corn, drained
  • ½ cup guacamole
  • sour cream (or vegan nacho cheese or cashew cream)

  1. Bake the Tater Tots according to the bag directions (place on a parchment-lined baking sheet and bake at 450 degrees Fahrenheit until crisp, about 25 minutes).
  2. Meanwhile, in a medium bowl, toss together the black beans, olive oil, garlic powder, chili powder, cumin, and kosher salt. Chop the cilantro, red onion, scallions, and jalapeño pepper (if using).
  3. When tater tots are done, sprinkle with cheese and return to oven until melted, about 2 minutes.
  4. Take the baking sheet out of the oven. Garnish with beans, cilantro, red and green onions, drained pico de gallo and corn, chopped jalapeno peppers (if using), and dollops of sour cream and guacamole.
