What is your favorite comfort food? Alex and I have talked about this at length, specifically on our Mac and Cheese podcast. And normally I would have answered something like macaroni and cheese until we made this homemade fried rice recipe. It reminded me that when I need some comfort food, a bowl of hot egg, fried rice with crispy onions, sriracha, and silky mayonnaise is absolutely perfect. How to make this homemade fried rice recipe

This homemade fried rice recipe is all about onions! In this case, we used three onions: onions, shallots, and scallions. But in Molly’s recipe, any onion will do: onions, shallots, leeks, scallions, ramps—you name it! Most of the time spent on this homemade fried rice recipe is spent chopping and sautéing the onions. So get ready to celebrate the onions!

To make this homemade fried rice recipe, you’ll also need some leftover rice. Since Alex and I don’t like to plan ahead, we always wondered if you could make real fried rice with rice made the same day. Unfortunately, the answer is no. In order for the rice to really “fried” the way you’d expect from homemade fried rice, it needs to be refrigerated and, if possible, cured. However, we tried making it in the morning and refrigerating it until the evening to then make the fried rice recipe that works too!

What I love about this easy fried rice is that it’s topped with both sriracha (hot sauce) and mayonnaise. Do you eat your fried rice with mayonnaise? It brings the tastiest and most delicious flavor to any bowl of hot and crispy rice. It hits all the marks for homemade comfort food in our book!

Looking for a homemade fried rice recipe? This lightly fried rice is maximum convenience, with three types of onions and a drizzle of sriracha and mayonnaise!


  • 2 tablespoons butter without salt
  • 4 cups Finely chopped onions of your choice: onions, shallots, leeks, spring onions, rampes (we used onions, shallots and spring onions)
  • Kosher salt
  • tasteless oil
  • 4 large eggs, beaten
  • Black pepper
  • 4 chopped garlic cloves
  • 1 tbsp chopped fresh ginger
  • 2 cups cooked brown or white rice (use the How to Cook Rice or Instant Pot method)
  • Sriracha and mayonnaise (or sriracha mayo) to serve

  1. Finely chop the onions. If using, thinly slice the spring onions and leeks. Chop the ginger.
  2. In a large skillet melt the butter over medium heat. Add the onions and a good pinch of salt and cook, stirring, for 12 to 15 minutes until nice and soft and smelling really nice.
  3. Meanwhile, heat a separate medium skillet over medium-high heat and brush the bottom with a light coat of oil (or butter). When the pan is hot, add the eggs and cook, gently scraping the bottom with a silicone spatula, until almost set. Remove the eggs from the heat, season with salt and pepper, chop roughly and set aside. (Alternatively, you can cook the eggs in the large pan first and then remove them before adding the butter and cooking the onions.)
  4. Add the garlic and ginger to the onions and sauté, stirring, for a further 2 minutes. If at any point the pan seems dry, add a little more butter or a little oil. Add rice and scrambled eggs and fold in. Salt the rice to taste. Increase the heat to medium-high, spread the mixture evenly over the pan and cook continuously, until bottom is crisp, about 5 minutes. Serve with sriracha and mayonnaise.
