Cookie Cake Recipe

This cookie cake recipe was invented out of necessity. Look, Alex and I are at a book club. (It’s related, I promise!) It’s a mixed group that meets monthly to drink wine and discuss a book: and man, it’s become the bright spot of our month! We read everything from graphic novels to thrillers and memoirs to YA, from Ta-Nehisi Coates to Gillian Flynn to John Green. And the biscuit cake: We also have the biscuit cake to celebrate each year’s run. Read on for this cookie cake recipe – AND a list of book club recommendations!

Chocolate Chip Cake

Celebrating with cookie cakes is our book club tradition at our “Book Club Anniversary.” It was just our fifth anniversary of dating, so of course: cookie cake was in stock! This year I felt like making one at home instead of buying one from a store.

Why make a homemade biscuit cake recipe? While many of Alex and My Desserts’ recipes are healthier, note: this cookie cake recipe doesn’t have a healthy twist! In this case, we can’t really say whether homemade is healthier. BUT, it’s 100% tastier than a store-bought cookie cake. (At least we think so!) Dark chocolate chips and a hint of orange zest make it truly irresistible: the taste is oh so real. And the consistency: wonderfully soft and fluffy, just like we love our cookie cakes.

We sent it to a recipe tester, Erin, who made it with her two daughters. She says, “It was so good. The orange peel was perfect. Why isn’t there orange in all chocolate chip cookies?” Why actually. And when we served it up at our five-year book club with “Happy Birthday Book Club!” in frosting, everyone loved it too. are you ready to cook

Chocolate Chip Cake

This cookie cake recipe is quite similar to a typical baking recipe: but as the name suggests, it’s a cross between a cake and a cookie! The texture is perfectly soft and chewy, like a soft version of a cookie. For our version of a cookie cake, we used a regular 9-inch cake pan, which works perfectly.

For the flavor of this biscuit cake, we wanted it to be nuanced enough to be enjoyed by adults, but delicious enough to appeal to children as well. Here are our tips;

  • Use both granulated sugar and brown sugar. For this cookie cake, we used two types of sugar for a more nuanced sweetness.
  • Use the best dark chocolate. The better the chocolate, the tastier the recipe. Here we used oversized dark chocolate chips for a fun look.
  • Use orange peel. Adding some spice to desserts brings out the flavor even more: just like adding a squeeze of lemon to any recipe. Here we played with the natural association of chocolate and orange. It brings a nuance that makes it seriously addictive!

This cookie cake recipe is perfect for all kinds of occasions. Sure, it makes an awesome book club treat or snack! Alex and I just brought it to a family BBQ which was fabulous. And if you’re celebrating a birthday, it’s also a super fun birthday treat for kids or adults! Whichever way you try, let us know if it’s a hit in the comments below!

The description

This moist chocolate cake recipe is easy to make and will be a crowd favorite: the perfect treat for book clubs and parties!

  • 1 ½ cups all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • 8 tablespoons unsalted butter, room temperature
  • ¼ cup granulated sugar
  • ½ cup brown sugar, packaged
  • 1 tbsp vanilla extract
  • 1 tbsp milk
  • 1 large egg, room temperature
  • ½ teaspoon Orange peel
  • ¾ cup Best quality dark chocolate chips

  1. Preheat the oven to 325 degrees Fahrenheit. Grease a 9 inch pie pan.
  2. Combine flour, baking powder, and kosher salt in a bowl. Put aside.
  3. In the bowl of a stand mixer (or electric mixer), using the mixer attachment, beat the butter, granulated sugar and brown sugar until fluffy, 2-3 minutes. Add vanilla, egg, milk and orange zest and beat for 1 minute.
  4. With the mixer on low, add the flour mixture until just combined. Remove bowl from blender and stir in ½ cup chocolate chips. Use a spatula to press the batter into the cake pan. Garnish with an additional ¼ cup of chocolate chips.
  5. Bake 25 to 27 minutes, until edges begin to brown and center is completely set. Allow to cool at room temperature for several hours before serving (cookie cake is way too gooey to cut when first baked, so the longer you can chill the better!). Cover and refrigerate at room temperature for up to 3 days or 1 week (bring to room temperature before serving).
