Here’s how to make homemade tarragon vinegar and how to use it.

Tarragon vinegar is a white vinegar enriched with fresh tarragon. How does it taste? The tarragon vinegar is very easy to make: the processing time is about 5 minutes! Once you put the weed in the vinegar, you have to wait over a week for the flavor to develop. This is definitely the hardest part of this recipe! Here are some tips for that:

  • Find a nice bottle with a cork (optional). Tarragon vinegar looks wonderful in a glass bottle, especially if you’re planning to give it as a gift. If you don’t care about aesthetics, use a covered jar or other glass container.
  • Boil the vinegar with the herbs. As soon as it begins to boil, remove from the stove.
  • Use a funnel to pour it into the bottle. Trust us. You don’t want spills!
  • wait 10 days. It takes 10 days for the aroma to fully develop. You can definitely try beforehand and see if you like the taste!

In about a minute, the light green color will fade away. If desired, replace with fresh herbs after 10 days!

Here’s the thing. Once you pour boiling vinegar over the tarragon, it will turn a muddy green color. So after the 10 days you can replace it to get a nice light green color. It’s only when you want it, and it’s especially nice for gifts. Otherwise, you can leave the existing tarragon in the jar or throw it away. In both cases! Store in a dark, cool place for up to 6 months.

Make tarragon vinegar with this fresh herb! It’s quick and easy to add a subtle herbal flavor, ideal for salad dressings and roasted vegetables.


  • 6 Tarragon sprigs, more to taste (see below)
  • 2 cups white wine vinegar

  1. Wash and dry the tarragon and a glass bottle thoroughly. Put the 6 sprigs of tarragon in the bottle.
  2. In a saucepan, bring the vinegar to a boil. Once it boils, remove from the heat and use a funnel to pour the vinegar into the bottle.
  3. Allow to cool to room temperature, then refrigerate or pantry for 10 days to allow flavor to develop.
  4. After the 10 days, you can replace the tarragon with fresh new tarragon so it’s light green, or leave the herbs present. Store in a cool, dry place for up to 6 months.
