Alex and I are typically low-maintenance (read: peanut butter toast) people. But every once in a while we’re ready for a special weekend breakfast. And we’re always looking for new and delicious breakfast ideas, especially vegan breakfast ideas, because we like to strive to think beyond eggs and bacon. These sweet potato hash browns are so easy and so delicious. It’s our new favorite way to cook sweet potatoes, because you don’t even need to have good knife skills!

OK. Do you know how to use a grater? Good. Because that’s all you need to know for this recipe! As experienced as we are in the kitchen, sometimes I still get upset when I have to dice a sweet potato. (True confessions.) Sweet potatoes can be very dense and difficult to cut. This Sweet Potato Rosti recipe couldn’t be easier because all you have to do is grate the potato!

In this recipe, we call for 1 pound of sweet potatoes. How much does 1 book cost? It’s only about 1 medium sized sweet potato. Some sweet potatoes you can find at the store are MASSIVE, sometimes weighing 1 ½ or 2 pounds. So it only requires a moderate amount of sweet potatoes. How do you make sweet potato hash browns? Grate the sweet potato on the large rack of a grater: you don’t even have to peel it! Then toss the sweet potato with olive oil, some garlic powder, salt and pepper, and one magic ingredient: cornstarch. The cornstarch helps them crisp up a bit and form little patties. Then bake for 30 minutes until the outside is crispy. While they cook you can clean up and prepare the rest of your breakfast or brunch.

So how do you serve this sweet potato hash brown? They’re perfect for a weekend breakfast or a leisurely brunch. You can serve them with eggs, which is perfect for vegetarian and gluten-free diets. Or even egg toast poached with turmeric and avocado for a hearty high-protein breakfast. If you like breakfast for dinner or brinner, it opens up a whole new world for these sweet potato hash browns. Serve with scrambled eggs and our super easy chilled black beans. Serve with baked salmon or white bean shakshuka with feta. Break them up and stuff them in a tortilla as tacos!

Anything goes with these simple sweet potato rosti! Alex and I are both obsessed, and we’re a little lazy about dicing our sweet potatoes right now. Get out a grater and it will get the job done faster and easier!

How to make Sweet Potato Rosti! Taking just 5 minutes to prepare, they’re delicious, easy and suitable for a variety of diets.


  • 1 pound sweet potato (approx 1 medium potato)
  • 3 tablespoons olive oil
  • 1 teaspoon cornstarch
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¾ teaspoon kosher salt

  1. Preheat oven to 375°F.
  2. Wash the sweet potato and remove the stains that leave the skin. Line a baking sheet with parchment paper. Using the large side of a box grater, grate the sweet potato on the baking sheet. Spread the cutlets out evenly, then drizzle with olive oil and sprinkle with cornstarch, garlic powder, black pepper, and kosher salt. Mix everything with your hands until well combined, then shape the potato into 6 fluffy mounds (see photo).
  3. Bake for 30 minutes until lightly browned on the outside and soft on the inside. Carefully remove the sweet potato rosti from the baking sheet with a spatula.
