It’s perfect in a drink like a margarita for just the right sweet cake flavor.

To get the strawberry and rhubarb flavor, make homemade strawberry and rhubarb syrup by simmering the berries and rhubarb with sugar. Once the fruit breaks down, you will strain it into a glass and refrigerate until ready to use. This syrup will keep in the fridge for a few weeks.

This Strawberry Rhubarb Margarita is one irresistibly sweet cake! Flavored ice cubes add tangy lime as they melt rather than watering down the drink.


  • 5 Lemons
  • 1 a handful of mint leaves
  • 2 cups Rhubarb, chopped
  • 1 cup strawberries, chopped
  • ½ cup Sugar
  • 8 ounces tequila
  • orange bitters
  • salt for serving

  1. For the ice cream, combine 1 cup of water, the juice of 1 lime (3 tablespoons), and the lime zest. Pour into an ice cube tray. Float a few mint leaves in each cube and freeze.
  2. Clean and roughly chop the rhubarb and strawberries. In a saucepan, combine 1 cup water, sugar, strawberries, rhubarb, and 1 pinch kosher salt. Simmer until the rhubarb has broken down, about 10 minutes, stirring occasionally. Filter and let cool. Measure out 1 ½ cups (if the syrup isn’t quite 1 ½ cups, add a little water.)
  3. For each margarita, combine 3 ounces of strawberry rhubarb syrup, 3 ounces of tequila (to taste), 1 ounce of lime juice, and a few dashes of orange bitters. Serve in a salt-rimmed glass over ice cubes.
