Here’s a deliciously fresh recipe you have to try with a load of berries: strawberry puree! What is that? Strawberry puree is a mixture of fresh strawberries, sweetener and lemon juice. It’s uncooked and only slightly sweet, unlike a strawberry syrup which is cooked with lots of sugar. Spoon the fresh puree onto pancakes, oatmeal, waffles and cakes, or eat with a spoon like applesauce. She surprised us with her pure taste: and she has become a clock in our house! (Our kid can’t get enough of it.)

How to make strawberry puree

This delicious puree is prepared in just 5 minutes: just put it in the blender! Strawberry syrup requires simmering berries with lots of sugar until it becomes syrupy. But with Mash, it’s just a quick hit. The flavor pops even more because it uses raw, undercooked berries.

  • To make strawberry puree, Blend 1 pound strawberries with ¼ cup sugar and 2 teaspoons lemon juice in a blender or food processor until smooth.
  • Wanna do half a recipe? You can do that too! Remember, if using a large blender, blend on low speed until incorporated (smaller batches can be difficult to blend).

Can a natural sweetener be used in strawberry puree? You bet! If you prefer all natural sugars like maple syrup or honey, these work too. You can substitute equal parts of the following sweeteners for sugar:

  • maple syrup
  • Honey
  • coconut sugar
  • agave syrup / agave nectar

We haven’t tried this with the monk fruit sweetener, but assume it would work as a 1:1 swap as well.

Storage Instructions: Refrigerate or freeze

Strawberry puree uses uncooked berries and therefore has a shorter shelf life than a syrup made with cooked berries. You can expect the following:

  • Chilled: You can store the strawberry puree in an airtight container in the refrigerator for 3 to 4 days.
  • Frozen: If you want it to last longer, freezing is the solution! It will keep for up to 3 months in a freeze-proof container.

You can skip all of the serving suggestions above and just serve this strawberry puree with a spoon! It’s a great fruit puree for kids and eaten like applesauce. Our 4 year old can’t get enough of it! He cleaned his first bowl and quickly asked for seconds.

Do you need a strawberry puree for an aperitif?

One thing to know about this strawberry puree recipe: it’s not ideal for drinks. We tested it in a strawberry cocktail and the flavor wasn’t strong enough. There’s also a lot of debris in a drink, which isn’t very appetizing.

You’ll see that there are a few brands that sell pureed strawberries for cocktails and it’s very sweet and more like a syrup. If you want to use it in drinks, use this strawberry syrup instead! It’s excellent in a strawberry soda or a strawberry vodka cocktail.

  • 1 Strawberry Pound
  • ¼ cup Granulated sugar (or coconut sugar, maple syrup, honey or agave)
  • 2 teaspoons fresh lemon juice

  1. Clean the berries. Blend all ingredients in a food processor or high speed blender. Adjust the sugar to taste depending on how ripe the strawberries are. Store refrigerated for up to 4 days or frozen for 3 months.
