After months of living and working in preparation for a nearly two week holiday, we successfully traveled to Greece and Italy and back and the weather couldn’t have been milder. We fell in love with Greece, renewed our love for Italy, ate fabulous food, walked ’til you drop and spent quality time with our dear friends and family. We’re working on editing our photos, which we’ll share as soon as they become available, as well as some Mediterranean dishes we’re currently experimenting with. Make this strawberry cornbread cake

Despite the reality of suddenly being at our desks instead of hiking the Mediterranean coast, it feels good to be back: meeting friends, sleeping in our own beds and being able to cook for ourselves – same thing. Today we had a kitchen full of friends to help us cook and model. It’s such a joy to spend time with these people who make Indianapolis rival the best places in the world.

Now that we’re home, strawberries are ripe at our farmer’s market, and we created this Strawberry Cornbread Cake to share with you! It’s an adaptation of this rhubarb cornbread from the edible perspective. We have eaten it several times and it has become a must: a dessert that is as good as it is nutritious. This cornbread cake is naturally gluten-free and made with cornmeal, rolled oats, and almond flour. It’s also sweetened only with maple syrup and fresh orange juice to add flavor. It’s a really satisfying way to end a summer meal.

This hearty strawberry cornbread cake is incredibly delicious for breakfast or dessert; It’s sweetened with maple and naturally gluten-free.


  • ½ cup old-fashioned oats or oatmeal
  • 6 tablespoons Almonds or ground almonds
  • ¾ cup meal with cereals
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 2 eggs
  • ⅓ cup Milk (unsweetened almond milk for non-dairy)
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 orange
  • 2 ½ tablespoons Butter, divided (non-dairy coconut oil)
  • 1 cup strawberries

  1. Preheat oven to 350°F.
  2. To prepare oatmeal and almond flour, place oatmeal in the bowl of a food processor and puree until very fine. Remove the rolled oats, then place the almonds in the bowl of a food processor and process very finely.
  3. In a large bowl, combine oatmeal and almond flour with cornmeal, baking soda, and kosher salt.
  4. In a medium bowl, whisk the eggs. Then add milk, maple syrup, vanilla extract, ½ tablespoon orange zest and ⅓ cup freshly squeezed orange juice. Melt 2 tablespoons of butter.
  5. Pour the wet ingredients into the dry ingredients, adding the melted butter last. Stir with a large spoon until just combined (avoid over-stirring). Let the dough rest for 5 minutes to thicken.
  6. Meanwhile, wash and chop 1 cup strawberries.
  7. In a 10-inch skillet, melt the remaining ½ tablespoon butter and use a pastry brush to brush evenly over the entire pan and sides, then remove from heat. Pour the batter into the mold and spread it evenly. Then place the strawberry slices on top.
  8. Bake until a toothpick comes out fairly clean (the center should spring back at the slightest touch and the edges will be golden), about 30 minutes.
  9. Leave to cool for 10 minutes and then cut into slices with a knife. Serve plain, with homemade whipped cream, coconut cream, sliced ​​strawberries or a drizzle of syrup.
