For this hot spinach artichoke dip, prepare a base similar to the cold spinach dip. But this one includes artichokes, parmesan cheese (delicious), and a trip into a hot oven. Here’s what you’ll do:

  • Defrost frozen spinach and squeeze out all the moisture. You want to squeeze out as much moisture as possible so the dip doesn’t runny.
  • Prepare the vegetables. They chop both the shallot and spring onion for the onion flavor as well as the tangy canned artichokes.
  • Stir in Greek yogurt, mayonnaise, parmesan, and spices. Dill and garlic powder bring great flavor here.

  • 10 ounces frozen chopped spinach
  • ¼ cup Sliced ​​shallot
  • 2 Green Onions
  • 14 ounces Crate (8.5 ounces dry weight) quartered artichokes
  • 1 ½ cups greek yogurt
  • ½ cup mayonnaise
  • ¾ cup grated Parmesan cheese, plus more for garnish
  • ¼ teaspoon dried dill
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Defrost spinach. Then use a strainer to squeeze out as much moisture as possible.
  3. Chop the shallot. Cut the spring onions into thin slices. Roughly chop the artichokes.
  4. In a medium bowl, toss the spinach, shallots, spring onions, and artichokes with the Greek yogurt, mayonnaise, parmesan, dried dill, garlic powder, salt, and pepper. Taste and add a few pinches of kosher salt if desired.
  5. Spread the dip evenly in a small casserole dish. Garnish with a sprinkling of grated Parmesan (and a sprinkling of paprika, if you like). Bake for 20 minutes, until heated through and cheese is melted.
  6. Serve hot with pita chips. Make-ahead info: Prepare up to 1 day ahead and chill in a bowl. Transfer to an Ovenproof Dish to Bake: You may need to bake a few minutes longer to heat through.
