Instead of the typical cream-based alfredo sauce we’re used to here in America, this fettuccine alfredo uses the “traditional” method: toss the hot pasta with butter and Parmesan cheese, which melts into a gooey, flavorful sauce. Tips for making Spinach Alfredo Pasta
This vegetarian pasta recipe takes less than 20 minutes, but keep the following in mind as you prepare:
- Use freshly grated parmesan cheese — Parmesan cheese sold in shaker boxes doesn’t melt like the stuff you can buy at the cheese counter. If possible, grate the parmesan yourself or buy the pre-grated cheese in a package. Avoid the stuff in the box at all costs!
- Wash your vegetables before using them — If you’re using a bunch of spinach and not canned baby spinach, wash it first!
- Use salted butter — We prefer salted butter in this Spinach Alfredo Pasta recipe to get just the right amount of salt in the dish.

The description
This easy Spinach Alfredo Pasta comes together in under 20 minutes and is a vegetarian dinner recipe the whole family will love!
- 12 ounces Spaghetti or Fettuccine
- 4 cups spinach leaves
- ¼ cup milk
- 1½ cups grated parmesan cheese
- 1/2 at 1 teaspoon of kosher salt
- 4 tablespoons butter
- Ground fresh pepper
- Bring a large pot of salted water to a boil; Cook pasta al dente. Reserve about 1 cup of pasta water in a liquid measuring cup; put it aside Then drain and rinse the noodles.
- In a large pot or pan, heat some of the cooking water over medium-high heat. Cook spinach leaves until just wilted and light green; then pour into a bowl. Sprinkle with a pinch or two of kosher salt and set aside.
- In the saucepan, add the milk, ¼ cup of the cooking water, and the Parmesan. Cook over low heat, stirring, until a smooth sauce forms.
- Add the noodles to the pan and flip to coat. Add butter, kosher salt, and freshly ground black pepper and stir until butter melts. A little cooking water to smoothen the sauce if needed. Taste and season with salt and pepper. Serve immediately
