What is the ultimate crepe? You may be thinking of buttermilk. But here’s a secret: sour cream pancakes are the best ever! They are extremely chewy, with a tangy flavor and delicious texture. Even better, they’re made with a more common fridge ingredient. (At least that’s for us.) You’ll never have to buy buttermilk again! These pancakes feature whole wheat flour for a healthy twist and amazing flavor, topped with maple syrup and a dollop…you guessed it! Sour cream.

What can you use in place of buttermilk in pancakes? Sour cream.

Yes, it is a wonderful wonder of nature! Sour cream works the same way buttermilk does in pancakes. Adding sour cream to pancakes makes them tender, moist, and fluffy, with richness and a light flavor. How it works? Sour cream helps activate the baking powder in the batter, making them super light and fluffy. Forget buttermilk: sour cream is the new kid on the block!

What’s in those sour cream pancakes?

Do you want to make the best pancakes? Alex and I usually have sour cream in our fridge, leftovers from everything from tacos to plated meals. So we were thrilled that you can use leftover sour cream when making pancakes! We have that on hand much sooner than buttermilk, which is more of a specialty ingredient. Here’s what you need to have on hand to make pancakes with sour cream instead of buttermilk:

  • Whole wheat and all-purpose flour
  • egg
  • milk
  • sour cream
  • neutral oil
  • maple syrup
  • baking powder, cinnamon and salt

You may already have these ingredients in your pantry and fridge! Then you just mix the wet, mix the dry and mix. As simple as that! It comes together in an easy breakfast for a special day or a nice brunch recipe. (Alex and I reserve pancakes for special occasions: we’re usually oatmeal breakfast types!)

  8. Coconut Berries and Bacon (surprisingly good!)

Homemade Sour Cream: It’s a Trick!

Did you know you can make sour cream yourself? It’s really easy to make and a fun cooking experience! And it tastes incredibly rich and satisfying. All you need is 24 hours, cream and buttermilk. Let the two sit in a warm spot for a day and it will thicken into a homemade version that tastes even better than the original. Go to How to make sour cream!

Now of course we know you probably don’t have buttermilk and whipped cream lying around…unless you bought them for a baking project! So, making sour cream at home is more of an interesting project. It’s magical how it thickens into delicious sour cream!

Sour Cream Pancakes are the perfect pancake: ultra fluffy, slightly flavorful and so delicious! You’ll never have to buy buttermilk again.


  • ½ cup whole wheat flour
  • ½ cup all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon Cinammon
  • ¼ teaspoon kosher salt
  • 1 big egg
  • ¾ cup milk
  • ½ cup sour cream
  • 1 tbsp maple syrup
  • 2 tablespoons neutral oil (vegetable or grapeseed oil)
  • To serve: sour cream, berries, maple syrup

  1. In a medium bowl, whisk together whole wheat flour, all-purpose flour, baking powder, cinnamon, and kosher salt.
  2. In another bowl, whisk the egg, then stir in the milk, sour cream, maple syrup, and oil.
  3. Add the wet ingredients to the dry ingredients.
  4. Lightly butter a pan and wipe off excess fat with a paper towel. Heat pan over medium heat. Pour the dough into small circles. Bake pancakes until bubbles burst on top and bottom is golden brown. Then turn them over and cook until done. Repeat with the rest of the dough. Serve immediately with maple syrup.
