These fluffy, cheesy scrambled eggs come together in no time! They are perfect for a special breakfast or brunch.

Alex and I don’t often cook fancy breakfasts, but when we do, it’s usually for guests. And this fluffy scrambled egg recipe is our favorite! You start with my mom’s method for the best scrambled eggs, by boiling the eggs over low heat and gently shaping them into soft folds. Then crumble some goat cheese for a flavorful and tangy touch. You can also use cheddar or parmesan if you prefer. The result is a creamy, gooey mass filled with tart cheese pockets. These eggs are always a hit with guests. Remember to accompany our roasted asparagus with lemon: it goes perfectly!

How to make soft scrambled eggs with cheese

These fluffy scrambled eggs with cheese are almost impossible to screw up. But to ensure your eggs come out perfect, here are a few tips to keep in mind:

  1. Grease the pan generously with butter– You don’t want your scrambled eggs to stick to the pan, so it’s important that you butter the pan first. Butter also adds a nice, subtle flavor to eggs.
  2. First, whisk the eggs in a bowl— Cracking the eggs into a separate bowl first and whisking them before adding them to the butter skillet will ensure that the yolks and whites combine completely, resulting in a smoother scrambled egg. Some people like to add a little milk or water at this point, but we didn’t think it was necessary.
  3. Boil the eggs on low and slow heat—Your eggs should be cooked on medium heat at most. The key to keeping scrambled eggs soft and fluffy is to cook them slowly, stirring occasionally. If you try to cook the eggs too quickly, they will likely become dry and hard.
  4. Take the eggs off the heat early—You want to remove the eggs from the heat just before they are fully cooked. This also keeps them nice and soft and prevents them from becoming too dry.

This recipe is one of three on our spring brunch menu, but the eggs are quick enough for a weekday breakfast or brine, which would be our top pick. It’s also a great choice for Mother’s Day brunch.

How to serve them!

This is your epic brunch spread, so serve these scrambled eggs any way you like! But if you need advice, Alex and I like to sprinkle chopped chives on top of those eggs. Chives give sticky eggs a subtle kick of freshness without overloading the dish. You can also enjoy these eggs with a slice of good quality toast or paired with asparagus and egg. These fluffy, cheesy scrambled eggs come together in no time! They are perfect for a special breakfast or brunch.


For the asparagus (optional)

  • 1 Bunch of asparagus
  • 1 lemon

For the fluffy scrambled eggs

  • 1 a handful of chives
  • 8th eggs
  • 4 oz goat cheese or ⅓ cup grated cheddar or parmesan cheese
  • ½ teaspoon kosher salt
  • Freshly ground black pepper
  • 2 tablespoons butter

  1. For the asparagus (optional): Wash and dry the asparagus. Remove the hard bottom part of the asparagus (1-2 inches). In a dry skillet over medium-high heat, cook the asparagus, stirring occasionally. After 3 minutes add ¼ cup water and cook for another 3-4 minutes. Taste and continue to cook until the thicker pieces are tender, adding more water if needed. Sprinkle with kosher salt. Garnish with lemon zest or lemon juice, if you like.
  2. For the eggs: Cut the chives into thin slices.
  3. In a medium bowl, whisk the eggs until well beaten. Crumble the goat cheese (or add the grated cheese) and mix into the eggs with the kosher salt and plenty of freshly ground pepper.
  4. In a pan, heat the butter over medium heat. Tilt the pan to make sure the entire pan is coated in melted butter, then pour in the eggs.
  5. Keep the heat medium. As the eggs begin to set, use a flat spatula to slowly scrape and crease portions of the eggs. Scrape occasionally until eggs form soft wrinkles, then remove from heat just before they fully harden. Serve immediately, garnished with chopped chives (if desired) and accompanied by asparagus tips.
