These amazing homemade Deviled Eggs have a smoky undertone of smoked paprika and the crispy shallots add the perfect crunch!

No special occasion is complete without deviled eggs, especially during spring and summer. As Easter approaches, eggs take center stage, which we couldn’t be happier about. We love them both in pretty much every way (poached, hard, with frittata…), but heck is always a treat. We’re fans of the classic deviled egg, but when we came up with the idea for homemade smoked deviled eggs, it was too good to pass up.

The smoky flavor here comes from smoked paprika! We used pimentón (Spanish paprika), one of our favorite spices that we love to use in paella and other Spanish dishes. (More on smoked paprika here.) And wow, does that turn a deviled egg into something wonderful! I loved the smoky flavor combined with the subtle bite of the sun-dried tomatoes. And the crunchy shallot on top added just the right amount of crunch. These eggs make a great addition to any spring or summer event…or the perfect afternoon treat in your fridge!

What are Devil Eggs?

If you grew up outside of the United States, you may not be familiar with Deviled Eggs. In short, deviled eggs are hard-boiled eggs where the yolks are scooped out and mixed with various ingredients. Classic deviled eggs contain a yolk that’s been mixed with mustard and mayonnaise, and they’re often topped with a sprinkling of plain paprika. Unless you grew up with deviled eggs, this combination probably sounds a bit odd. But the tangy mustard slices through the creamy mayonnaise perfectly, and the final deviled egg makes the perfect appetizer while other dishes are being prepared.

Homemade deviled eggs are especially popular at family gatherings and important holidays like Easter, Christmas, and Thanksgiving. They look pretty fancy when served on a pretty platter, but they’re actually easy to make. The hardest part of the whole process is peeling the eggs; But once you complete this step, everything is quite simple.

How to make homemade deviled eggs

Arguably the most important step in making homemade deviled eggs is hard cooking. You’re looking for hard-boiled eggs with the yolk fully cooked; A firm yolk is easier to scoop out, puree, and mix better with the other ingredients. Once you’ve removed the yolks and mixed in the mayonnaise, sundried tomatoes, and smoked paprika, you’re ready to pour in the egg whites. For the best presentation, I recommend placing the egg yolk mixture in a plastic sandwich bag and using it as a piping bag. Just cut off a corner of the bag and squeeze the mixture into the egg whites! If that seems too time-consuming, you can also add the filling with a spoon – just in the way that is easiest for you.

Finally, we recommend using eggs from happy hens whenever possible. If you’re buying fresh eggs, you should buy them a few days before cooking, as older eggs are easier to shell. Look for eggs at your local farmer’s market or choose free-range eggs at the grocery store.

  • 6 eggs
  • 1 shallot
  • ¼ cup vegetable oil
  • 2 tablespoons Chopped sun-dried tomatoes in oil, drained
  • 4 tablespoons mayonnaise
  • 1½ teaspoons smoked paprika (pimenton)
  • Kosher salt

  1. Boil hard-boiled eggs using the Perfect Hard Boiled Eggs or Instant Pot Hard Boiled Eggs methods.
  2. While the eggs are cooking, cut 1 shallot into small rings. In a small saucepan, heat ¼ cup vegetable oil. Test the heat of the oil with a shallot; When it’s sizzling, add the remaining shallots. Cook until shallots are golden brown, about 4 minutes. Remove from the pan with a slotted spoon and place on paper towels to cool. Sprinkle with some kosher salt and set aside until ready to serve.
  3. When the eggs are boiled, cooled and peeled, cut them in half and place the yolks in a bowl. Mash the yolk with a fork.
  4. Finely chop 2 tablespoons sun-dried tomatoes (stripped of oil). Then mix the tomatoes with the egg yolks, 4 tablespoons mayonnaise, 1½ teaspoons smoked paprika, and about ⅛ teaspoon kosher salt (or to taste).
  5. Pour the mixture into the egg white halves. Refrigerate until ready to serve. Just before serving, top each egg with a crispy shallot for garnish.
