  • 2 eggs
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon dried dill
  • 2 grind freshly ground black pepper
  • ½ teaspoon the water
  • ½ tbsp olive oil
  • 2 tablespoons feta cheese
  • ¼ cup Smoked salmon, crumbled (1 ounce)
  • 1 teaspoon chopped chives

  1. In a small bowl, beat the eggs. Whisk vigorously with kosher salt, dill, pepper and water until the mixture is fluffy and all the egg whites are incorporated.
  2. Heat the olive oil in a small 8-inch non-stick skillet over medium-high heat. When the olive oil is simmering, add the eggs and cook without stirring for 2 minutes. Shake the pan a little to continue cooking the eggs evenly when they begin to set.
