Why look for English cucumber?
This smoked salmon appetizer is great no matter what pickle you find: we highly recommend looking for an English pickle, though. English cucumbers are long, thin cucumbers sold in stores covered with plastic. Why use here?
- English cucumbers are long and straight, with thin skin with ridges. The seeds are so small that they are hardly noticeable. The taste of an English cucumber is milder than that of the standard cucumber and does not need to be peeled or pitted before eating! Because the thin skin is so fragile, it’s sold in the grocery store with a plastic sleeve. Not only does it taste better, but it also has a lighter green color and a more festive appearance.
- Cut standard cucumbers are shorter, with thick, dark green skin and very large seeds. The thick skin and seeds can be bitter, so they are often removed during cooking. You can substitute a standard pickle here, but the taste is much better with an English pickle.

This Smoked Salmon Appetizer is easy and perfect for the holidays! Cucumber, cream cheese and dill make a snack everyone will love.
- 1/2 English cucumber (20 slices)*
- 4 oz Cream cheese, softened
- 1 tbsp Mayonnaise (or Greek or plain yogurt)
- 1 teaspoon Dijon mustard
- 2 tablespoons chopped fresh dill, plus sprigs of dill on top
- 1 Spring onion, very finely chopped
- 3 ounces smoked salmon
- Cut the cucumber into 1/4 inch slices. (If desired, sprinkle a little kosher salt on the slices.)
- In a bowl, mix the softened cream cheese with the mayonnaise, Dijon, chopped fresh dill, and chopped green onion.
- Put a dollop of cream cheese on each cucumber slice and top with a small piece of smoked salmon. Garnish with dill sprigs and serve immediately or refrigerate until ready to serve (up to 1 day in advance).
Remarks
*Double for a big party to cook 40 bites. Try to find an English pickle if you can: it’s long and thin, has no seeds, and has a milder flavor than the standard pickle. You can substitute the standard cucumber, but be sure to peel it.
