In general, the recipes we share here are fresh and healthy dishes, but every now and then a sweet treat comes along that’s too good not to share. This time it’s these Almond Flour Chocolate Chip Cookies. While not considered healthy, it can happen healthy-ish.

With a dough base consisting primarily of almond flour (ground almonds), it packs more nutrients than the typical refined white flour biscuit. It’s also gluten and dairy free, making it suitable for a variety of diets. And the most important thing for us, it is very simple: Mix all the ingredients in a bowl, put them in a pan and cook. How to make pancakes from almond flour

These Almond Flour Chocolate Chip Cookies are so easy to make and bake right in one pan! They’ve got just the right texture: chewy, caramelized, and dense like a blondie made by mixing together almond flour, brown sugar, and butter or coconut oil. To make the almond flour cookies, simply mix together the almond flour, sugar, butter, egg white, and chocolate chips. Then press into a pan and bake! After cooking, cut into pieces and serve. You can serve it right in the pan while the chocolate melts, or you can make it ahead of time and let it cool to room temperature. We also like to cut this up into small squares and serve them up as little bite-sized almond flour chocolate chip cookies. When you fancy a decadent treat, top a slice with ice cream, homemade whipped cream, coconut whipped cream, or yogurt whipped cream!

These Almond Flour Chocolate Chip Cookies are an easy gluten free dessert! All you need is a bowl and 5 minutes of exposure time.



  1. Preheat oven to 400ºF.
  2. In a medium bowl, combine almond flour, brown sugar, and kosher salt. Stir in the coconut oil, egg white, vanilla, and most of the chocolate chips (saving a small handful to press the top). Stir until a cohesive dough forms; If necessary, shape the dough with your hands so that the dry and wet ingredients combine well.
  3. In an 8-inch non-stick pan, press the batter into an even layer, then press the remaining chocolate chips on top. Smooth the top by rolling over it with a small glass.
  4. Bake for 18 to 20 minutes until golden brown. Let cool for 30 minutes so the texture sets but the cookie is still warm. Cut into pieces and serve from the pan. Or, if desired, carefully run a thin knife around the edge and invert the cookie onto a plate, then place right side up on the serving dish. (Note: If you plan to eat the cookie before the 30 minute rest time, eat it straight out of the pan as it will be difficult to cut and remove pieces when the cookie is hot.)

Remarks

Be sure to use almond flour in this recipe. Don’t use almond flour, which is coarser and made from shelled almonds. Almond flour is finer ground and is made from blanched almonds that have no skin.
