Need a healthy and easy side dish? Here’s a “recipe” that’s more of an idea than anything: sautéed broccoli! Now that sounds basic. But you’ll be surprised at how much flavor you get when you cook this healthy vegetable to perfection. Broccoli is often overcooked, leaving it mushy and flavorless. Here, Alex and I show you our easy sautéed broccoli recipe: how to cook it so that it’s lightly browned but perfectly crisp, tender, and flavorful!

How to Make Broccoli Stir Fry…the right way!

Broccoli is easy, right? But so many home cooks cook well past the point of no return. Overcooked broccoli is the worst: it’s soft and lifeless. Instead, you should only cook it to the point where it’s tender but still light green and crispy. Even better: it takes less time! There’s no reason to spend more time boiling over (ha!). Here are our tips for preparing the best sautéed broccoli:

Tip 1: Cut into medium-sized bouquets.

When cutting broccoli into florets, try to leave a good portion of the stalk to give it a nice shape. It’s my own preference so the broccoli doesn’t look chunky! Cut them into medium-sized pieces: not so small that they fall apart, but also not so big that they are difficult to cut.

Tip 2: Fry at medium heat for 5 minutes.

The main pan is soaked in olive oil for just 5 minutes! Use medium heat here: Don’t let it get to medium heat or the broccoli will turn too brown. Watch the pan and be sure to stir a little so the broccoli doesn’t get too brown anywhere.

Tip 3: Cover and cook (steam!) for another 2 minutes.

Covering the broccoli at the end locks in the moisture and steams it out at the end. This helps to cook it fully rather than sautéing it more crispy and brown. Before this step you can add your spices. That’s it! Perfectly seasoned sautéed broccoli in just 10 minutes.

Ways to Season Sauteed Broccoli (in this recipe and more ideas!)

The key to a good sautéed broccoli: seasoning! First, make sure you salt it perfectly to taste. We then used chopped spring onions, Italian seasoning and garlic powder as accessories (see recipe below). If you have a lemon on hand, adding lemon zest makes for the perfect zest! Here are some additional flavor ideas:

  • Grated Parmesan or Pecorino Romano
  • Feta cheese or crumbled goat cheese
  • A few dashes of rice vinegar, soy (in place of the last ¼ teaspoon of salt), and sesame seeds
  • A web of balsamic reduction
  • Roasted almond slivers
  • Chopped Garlic
  • Grated Ginger
  • Panko and dried herbs

  • 1 1/2 Pound (2 large heads) broccoli
  • 2 Green Onions
  • 2 tablespoons olive oil
  • 2 teaspoons Italian spice
  • ⅛ teaspoon garlic powder
  • ½ teaspoon kosher salt, plus more to taste
  • Optional: 1 teaspoon lemon zest
  • Dress it up: Add a sprinkling of grated parmesan or feta cheese!

  1. Cut the broccoli into medium-sized florets (leave a good portion of the stalk for a nice shape; see photo). Cut the spring onions into thin slices.
  2. In a large skillet over medium-high heat, heat the olive oil. Add broccoli florets and sauté for 5 minutes, stirring occasionally (broccoli will brown slightly in spots). Stir in the spring onions, Italian seasonings, garlic powder, and Kosher salt.
  3. Cover and cook until tender but still light green, 2 to 3 minutes more. Taste and add a few pinches of salt (bring out the flavor!) and freshly ground pepper if needed. Place the broccoli in a bowl and serve immediately. Sprinkle with lemon zest if you like.
