  • Chickpeas: Drain and then rinse a can of chickpeas.
  • Pepper: Dice one pepper (about a handful).
  • Cucumber: Dice one English cucumber (about a handful). We like to use an English cucumber because it doesn’t need to be peeled. If you can only find a regular cucumber, peel it first!
  • Spices: Put everything in a bowl and drizzle with olive oil, red wine vinegar, salt and smoked paprika.

  • 15-oz can of chickpeas (or 1 ½ cups cooked)
  • ¼ cup Peppers, diced
  • ¼ cup English cucumber, chopped
  • ½ tbsp olive oil
  • ½ tbsp red wine vinegar
  • ½ teaspoon kosher salt
  • ½ teaspoon smoked paprika
  • Ground fresh pepper
  • 1 a sprinkling of celery seeds or shredded fresh herbs (parsley, dill, basil, etc.), optional

  1. Drain and rinse the chickpeas.
  2. Dice peppers. Chop the cucumber (peel if using a standard cucumber; English cucumber does not need to be peeled).
