Serve with orzo, couscous, or rice and it’s an explosion of flavors on your plate (or bowl). Here’s how to whip up this delicious weeknight dinner.

This Skillet Shrimp Dinner can be made with a variety of veggies: but the ones we’ve picked here are quick and easy to make! The veggies only cook 10 minutes before adding the shrimp, so stick with quick-cooking veggies if you want to get creative. Here are the veggies and spices to make this griddle meal:

  • Green beans: The thinner the better! The French are great if you can find them

The basic concept for a shrimp dinner on a griddle? You cook vegetables and proteins right on the same hob. The shrimp will cook very quickly, but the veggies will need a little more time in the oven (but not much!). So you cook the veggies first and then add the shrimp. Here are the basic steps:

  • Prepare the vegetables Mix them with olive oil and spices. Place them on a baking sheet lined with parchment paper.
  • Boil the vegetables for 10 minutes at 400 degrees Fahrenheit.
  • Meanwhile, prepare the shrimp Mix it with olive oil and spices.
  • Place the shrimp on the same plate and cook for 6 to 8 minutes, until opaque and cooked through. As simple as that!

This Skillet Shrimp Dinner is the epitome of simplicity and flavor! It includes Mediterranean vegetables, lemon and feta cheese.


  • 1 pint Cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 8.5 ounces Can (dry weight) quartered artichoke hearts, drained
  • 8 ounces green beans (French green beans work well if you can find them)
  • 3 tablespoons olive oil, shared
  • 1 teaspoon Garlic powder, divided
  • 1 ¼ teaspoon kosher salt, shared
  • ½ teaspoon oregano
  • 1 Pound medium shrimp, deveined (tail or peeled)
  • ½ teaspoon smoked paprika powder (alternatively normal paprika powder)
  • ½ teaspoon onion powder
  • 2 tablespoons lemon juice
  • ½ cup feta cheese
  • 1 tbsp chopped parsley or fresh dill for garnish
  • Lemon orzo, plain couscous, rice or quinoa to serve

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Line a large baking sheet with parchment paper. Cut the vegetables as indicated above. Place in a bowl and toss with 1 tablespoon olive oil, ½ teaspoon garlic powder, ½ teaspoon oregano, and ¾ teaspoon kosher salt. Pour onto the baking sheet in one layer and bake for 13 minutes.
  3. Dry the shrimp. In a medium bowl, toss the shrimp with 2 tablespoons olive oil, ½ teaspoon smoked paprika powder, ½ teaspoon garlic powder, ½ teaspoon onion powder, and ½ teaspoon kosher salt.
  4. Place the shrimp on top of the vegetables on the baking sheet. Place the tray back in the oven and bake until the shrimp are opaque and cooked through, depending on the size of the shrimp, 6 to 8 minutes.
  5. Take out of the oven. Sprinkle with lemon juice, feta cheese and chopped parsley. Serve immediately.
