The kind of shrimp to buy
There are a few things to keep in mind when shopping for shrimp for this Sheet Pan Shrimp Fajitas recipe! Here’s what you need to know:
- The tail is beautiful but can be annoying. We love the look of the tails on the shrimp, but you’ll need to remove the tails before preparing your fajita. For ease of consumption, you can opt for fully peeled shrimp.
- Frozen or fresh work. Frozen shrimp can be even fresher than fresh shrimp if frozen immediately after being caught. Just make sure you thaw the shrimp beforehand.
- Look for deveined shrimp. Try to find shrimp that have already been deveined, which will save you a lot of headaches.
- Wild fishing is a sustainable choice. Wild fish caught in your country is generally a sustainable choice. There are also quality options at well-regulated farms; see Seafood Watch consumer guide.

Tips for reheating tortillas
While your shrimp fajitas are cooking, be sure to reheat the tortillas! You just can’t make good fajitas with cold, chewy tortillas. How to Reheat Tortillas Like a Pro:
- Place them over the flame of a gas burner. Place each tortilla directly on a gas burner for a few seconds on each side and rotate with tongs. This will lightly char the edges and warm the tortillas. Then throw them in a tortilla warmer!
- Heat them up in the oven. Go to How to Reheat Tortillas. You can also char them with a kitchen torch if you’re a fan of charred tortillas like us.
