are you a snacker I am more than I want to be. No matter how hard I try, sometimes my motivation to snack is because I’m bored, aimless, stressed, tired, or just on autopilot. But as I aim to be more conscious and mindful of my eating habits, I’m working on snacking because I am hunger.

Luckily, after we switched to mostly natural foods, our snacks became pretty healthy (as long as we don’t overdo it with portion sizes). This week’s Crunchy Chickpeas and Honey Roasted Almonds are gluten-free snacks that are packed with nutrients and tasty enough to fill you up. We shared these Honey Roasted Almonds at a party and they were gobbled up in no time.

How to make toasted almonds with honey

Making honey roasted almonds is surprisingly easy and requires very little prep work. You’ll need to warm the honey slightly in the microwave first so it’s easier to mix with the other ingredients. Next, combine the hot honey, unsalted almonds, a pinch of kosher salt, sesame seeds, and a pinch of cayenne pepper. Take the time to mix everything well to make sure the almonds are evenly coated in the honey mixture.

When everything is mixed, spread the almonds on a baking sheet lined with baking paper and roast for 10 minutes (use baking paper, otherwise the almonds will stick to the baking sheet!). Let the almonds cool completely on the baking sheet before breaking them. Do not Eat the almonds straight from the oven! The honey will practically melt and will burn your mouth.

Store these honey roasted almonds in an airtight container at room temperature. These will keep for up to two weeks, but are likely to be gone before then!

Tips for roasting almonds in the oven

These Honey Roasted Almonds are hard to screw up, but there are a few things to keep in mind when preparing this recipe.

  • use parchment paper– the parchment paper keeps the honey toasted almonds from sticking to the baking sheet (a mess you’ll never get rid of! Ask me how I know…).
  • Fry over low heat– Unlike hearty root vegetables and baked fries, almonds don’t need to be roasted in the oven at over 400 degrees. 350°F is hot enough to make these honey roasted almonds, so don’t be tempted to turn up the heat!
  • Almonds will whistle in the oven— At the end of the roasting time, you can tell that the almonds are well roasted because they sizzle a little. You’ll have to listen carefully, but you’ll definitely be able to hear a slight hiss (sounds like air escaping from a closed container).
  • Roasted almonds do not crisp up immediately– When you first take these honey roasted almonds out of the oven, they won’t be crunchy. They’ll crisp up as they cool to room temperature, and when they’re completely cool they’ll have a bite to eat.

  • 2 tablespoons Honey
  • 2 cups unsalted toasted almonds
  • ¼ teaspoon kosher salt
  • Few ½ teaspoon cayenne
  • ¼ cup Sesame seeds

  1. Preheat oven to 350°F.
  2. In a small microwave-safe bowl or measuring cup, place 2 tablespoons of honey and microwave for 15 seconds. In a large bowl, mix the honey with the remaining ingredients.
  3. Pour the mixture onto a baking sheet lined with parchment paper and bake for 10 minutes. Allow to cool completely, then gently crack open the almonds. store in an airtight container.
