This weekend was the most spring-like of the year, the sun was shining and the magnolias were just beginning to bloom. We spent the day doing this I’m on vacation feeling, even though it was only the weekend in our own neighborhood. Eventually, this idea for asparagus tacos came up. Asparagus in tacos? It sounds a bit unusual, but it’s a springtime take on the ubiquitous Mexican standard that works pretty well! Read on for the asparagus tacos recipe.

How to make asparagus tacos

Ok, we know asparagus tacos sound a bit unusual, but listen to us! This spring fusion taco recipe is incredibly delicious and was a hearty and easy dinner recipe for both of us. It would also be perfect as a spring brunch! As an accessory to the asparagus, we have prepared fluffy scrambled eggs with ricotta, which are delicious on their own! Then, to balance it all out, a creamy chive yogurt sauce makes it worthy of a good messy taco. Even without traditional Mexican flavors like cumin and coriander, it holds its own and would make a delicious spring brunch, lunch, or dinner.

The asparagus cooking technique for these asparagus tacos is one of our favorites we’ve found so far: cooking it in a griddle! It’s not about oil or butter: just cook the asparagus tips in a dry pan, then add water to steam them while they cook. With a few pinches of kosher salt, the sticks become tender and delicious. Another serving idea for the dish is to skip the tacos and just serve ricotta scrambled eggs with an asparagus chive yogurt sauce – that would be another great brunch option.

These delicious asparagus tacos are made with fluffy scrambled eggs topped with ricotta cheese, grilled asparagus, and a creamy chive yogurt sauce.


  • 1 Bunch of asparagus
  • 1 a handful of chives (2 tablespoons chopped)
  • 1 cup greek yogurt
  • 1½ cups Whole milk ricotta cheese
  • 8th eggs
  • 1 tbsp butter
  • 8th Corn tortillas
  • Kosher salt
  • Freshly ground black pepper

  1. Wash the asparagus and cut into 1½ cm pieces. In a dry skillet over medium-high heat, cook the asparagus, stirring occasionally. After 3 minutes add ¼ cup water and cook for another 3-4 minutes. Taste a piece and continue cooking until the thicker pieces are tender. Optional: Prepare a bowl of ice water and place the cooked asparagus in the ice water for 1 minute (this keeps the asparagus nice and green, which is useful if you prepare them ahead of time).
  2. Chop the chives. Mix the chives with the Greek yogurt and a small ½ teaspoon of kosher salt. Add small amounts of water (up to 4 tablespoons) until you get a creamy consistency.
  3. Drain the ricotta cheese of excess liquid. In a medium bowl, crack the eggs and whisk well. Add ½ teaspoon kosher salt and plenty of freshly ground black pepper.
  4. In a pan, heat the butter over medium heat. Tilt the pan to make sure the entire pan is coated in melted butter, then pour in the eggs. Keep the heat medium-low. If the eggs are just beginning to set, use a flat spatula to slowly scrape parts of the eggs and create wrinkles. Scratch occasionally until eggs form soft folds; Turn off the heat just before they are fully cured. Add ricotta cheese chunks and a few pinches of kosher salt. With the heat off, stir in the cheese roughly, then place the eggs in a bowl to avoid overcooking.
  5. To serve, place the scrambled eggs on a tortilla and garnish with asparagus spears and yogurt chive sauce.
