For the savory waffles

  • 1½ cups whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ⅓ cup butter without salt
  • 1½ cups milk
  • 1 big egg
  • 2 tablespoons chopped chives

For garnish

  • 4 eggs
  • ¼ cup grated white cheddar cheese
  • 1 tbsp chopped chives
  • Pure maple syrup for drizzling

  1. Heat the waffle iron over high heat.
  2. In a medium bowl, combine whole wheat flour, baking powder, and Kosher salt; mix to combine.
  3. In a microwave-safe bowl, melt the butter. Add the milk and microwave for another minute. Stir egg into wet ingredients until fully combined.
  4. Add wet ingredients to dry ingredients and stir until just combined; do not overmix (dough may be lumpy).
  5. Chop the chives; Add 2 tbsp to batter, reserving 1 tbsp for garnish.
  6. Immediately place batter in center of waffle maker and allow to rise 1/2 inch from the sides, then cook according to waffle maker instructions. Take out the finished waffles and place them on a baking sheet without stacking them. Bake waffles to order or place baked waffles in a 300°F oven to keep warm.
  7. Poach the 4 eggs for the topping.
  8. To serve, place the waffle on a plate and drizzle with some maple syrup. Garnish with a poached egg, shredded white cheddar cheese, and the remaining chopped chives.
  9. Baked waffles can be frozen; Place them in a plastic bag and squeeze out any remaining air with a straw before sealing. Remove from the freezer to warm up and lightly toast in the toaster.
