What’s the white stuff on the salmon when it’s cooked?

Have you ever noticed that when salmon is cooked, a sticky white substance appears on the fish? And rest assured: it happens to everyone! And that’s perfectly normal. The white stuff is simply coagulated protein that oozes to the surface as it cooks. It even has a name: albumin.   • Cook it at a lower temperature to cook it more gently
  • Before cooking, salt the salmon in a solution of salt and water

Here are some more tips for cooking salmon! In this caper salmon recipe, we chose to bake the salmon in foil to lock in that moisture. Here are some pointers for the perfect salmon:

  • Salt the salmon while the oven preheats (see above).
  • Add the lemon wedges. Keep the lemon next to the salmon or the top of the fish will become sticky.
  • Herbs are optional but delicious. If you have access to fresh thyme or oregano, adding a few sprigs is wonderful and adds a nice flavor.

The description

This caper salmon is baked in foil until perfectly tender, then brushed with a delicious garlic butter sauce. An easy healthy dinner recipe!


  • 4 (6 ounces) salmon fillets
  • Olive oil, for brushing
  • ½ teaspoon kosher salt, plus more for the brine
  • ½ teaspoon freshly ground black pepper
  • 6 lemon slices (from 1 Lemon)
  • sprigs of fresh oregano or thyme (optional)
  • 3 tablespoons Salted butter
  • 2 tablespoons Capers in the glass, drained
  • 1 Garlic clove, grated
  • For garnish: finely chopped Italian parsley, chives or other herbs

  1. Preheat oven to 325 degrees Fahrenheit.*
  2. Salt the salmon: While the oven is preheating, in a shallow bowl, combine 4 cups of room temperature water and 3 tablespoons of Kosher salt. Put the salmon in the water and wait 15 minutes.
  3. Place the salmon in foil: Place a large piece of aluminum foil on a baking sheet and brush with olive oil. Dry each piece of salmon and place it on the foil. Sprinkle the salmon with ⅛ teaspoon kosher salt for each fillet and freshly ground pepper. Arrange the lemon slices and fresh herbs around (not on top of) the salmon. Close and seal the foil around the salmon.
  4. Bake: Bake the salmon in the foil for 10 minutes. Then, open the foil pack to allow the steam to escape and cook again until tender and pink in the center (temperature should be between 125-130 F in the middle) for 3-6 minutes depending on thickness. A 1 inch (2.5 cm) thick fillet should cook in about 15 minutes total.
  5. Prepare caper butter: Meanwhile, melt the butter over low heat. Once melted, add capers and garlic and cook until fragrant, about 3 minutes.
  6. Surcharge: When the salmon is done, squeeze a little lemon juice from the remaining lemon slices. Pour the butter sauce over each piece of salmon. Garnish with finely chopped parsley or chives.
