A salmon salad sandwich is a quick and easy lunch idea! Creamy and hearty, it’s a hearty twist on the classic tuna.
- 1 Celery rib, finely chopped
- 2 tablespoons finely chopped red onion
- 1 Dill pickle, finely chopped (¼ cup)
- 1 5 ounces salmon (2/3 cup cooked salmon flakes)
- 1 tbsp capers, drained
- ¼ cup Greek yoghurt or natural yoghurt*
- 1 tbsp mayonnaise
- 1 tbsp Dijon mustard
- ¼ teaspoon kosher salt
- Freshly ground black pepper
- 4 slices of bread
- Lettuce leaves, tomato, etc.: for garnish
- Prepare celery, red onion and dill pickle as above.
- Drain the salmon and place in a medium bowl: mash lightly with a fork. Add chopped vegetables, capers, Greek yogurt, mayonnaise, Dijon mustard, and kosher salt and stir to combine. Taste and add more salt if you like.
- If desired, spread the bread with mayonnaise. Add lettuce or other sandwich fillings. Spread the salmon salad on one half of the bread and cover with the other slice of bread.
Remarks
*For a dairy-free product, omit the yogurt and use a total of 3 tablespoons of mayonnaise: add more if you like.
