Here’s a little meal we made in honor of Valentine’s Day. I have to admit, I used to be pretty cynical about Valentine’s Day. I won’t go into detail here, but some of my arguments have been consumerism, cheesy cards, and how bad some single people feel. Ever since I was young I have embraced the concept of celebrating love on February 14th because why not take another day to appreciate those you care about? And it doesn’t have to be just romantic love. Family, friends, community, all can be celebrated on V-Day! I follow that with a meal that’s perfect for a couple’s cooking date, although of course it can be doubled or tripled for more. Read on for the salmon en papillote recipe!

What is salmon en papillote?

SAlmond in foil is a chic French way of saying “saumon en papier”. The fish is baked in a packet of parchment paper for just under 10 minutes until tender and delicious. We added lemon, thyme and rosemary for flavor and cooked it with thinly sliced ​​carrots. A few added hash browns make this a meal. It’s easy to put together but so stylish it looks like you’ve spent hours in the kitchen.

Make this salmon en papillote

For salmon, try looking for sustainably farmed fish. We bought ours at the Indy Winter Farmer’s Market from Sitka Salmon Shares, who responsibly source fish from Alaska. If you are vegetarian or vegan, we have a white bean option (below). You might want to add a salad or bread as the white bean option isn’t as filling.

If you try this as a bake date, be sure to do the following:

  • Buy the ingredients in advance; Make sure you don’t shop when you’re hungry!
  • Put on some music (Alex’s favorite is Google Music, they have great thematic mixes).
  • Pour in wine or the drink of your choice.
  • While cooking, collect some snacks: we like a good cheese, crackers, olives, baguette, nuts, etc. Simple items that do not require any preparation.
  • Allow about 1 hour or a little more time to prepare the meal, depending on how quickly you cook it.

In this salmon en papillote recipe, the fish is baked in a packet of parchment paper for just under 10 minutes until tender and delicious.


For the fried potatoes (optional)

  • 2 Pound mix of red and yellow skinned potatoes
  • 2 teaspoons Thyme leaves, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon Honey
  • Ground fresh pepper

For the salmon in papillote

  • 2 pieces of parchment paper
  • ½ Pound salmon (or for a veggie version 1½ cups cooked or a 15-ounce can of kidney beans)
  • 3 medium carrots
  • 2 Garlic cloves
  • 1/2 lemon
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 1 green onion
  • 1 tbsp olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon paprika
  • Ground fresh pepper

  1. Preheat oven to 425°F.
  2. For the fried potatoes (optional): Dice the potatoes. Chop the thyme leaves. In a large bowl, toss potatoes and thyme with olive oil, kosher salt, honey, and freshly ground pepper. Place in a single layer on a parchment-lined baking sheet and bake for 30-35 minutes until tender and lightly browned.
  3. For the salmon en papillote: Halve the salmon. Peel the carrots and cut into very thin strips (julienne). Peel the garlic. Slice the lemon. Finely chop the thyme and rosemary. Thinly slice the green part of the spring onion.
  4. Fold the parchment paper in half and cut into a heart shape. Lightly brush the right half of the parchment heart with olive oil. On the right half of the heart, place the carrots on the paper, and then place the salmon on top. Place the whole garlic cloves and lemon slices next to the carrots. Top each packet with half the chopped herbs, ½ tbsp olive oil, ¼ tsp kosher salt, ⅛ tsp paprika, and freshly ground pepper. (Note: For the vegetarian version, substitute 1 ½ cups of drained and rinsed kidney beans. Reduce the herbs to 2 teaspoons each.)
  5. Seal each bundle by folding the left half of the heart, then making straight ½-inch creases along the edge of the heart. (For more information on folding parchment paper, see How to fold parchment paper.)
  6. Cook the salmon for 9 minutes for a 1 inch piece or 10 to 11 minutes for a 1 inch piece (insert a knife in the center of a piece to ensure desired doneness). Rest for a few minutes before serving. Garnish with spring onions and serve.
