What is sprouted rye flour?

We used sprouted rye flour for this flatbread. Why use sprouted flour instead of regular? Sprouted flours are less processed than typical flour, have increased nutritional value, and are easier to digest. When we served these rye pizza dough flatbreads to guests, we baked them before the guests arrived and topped them just before eating. Smearing cracker crusts with a savory garlicky spread and topped with crunchy veggies is a new take on “pizza night” that we all enjoyed, including the toddler! For the rye cracker crust

  • 1 cup rye flour
  • 1 cup whole wheat flour
  • ½ teaspoon kosher salt
  • ¼ teaspoon baking powder
  • 2 tablespoons olive oil
  • ¾ cup the water

For the tomato flatbread

  • 2 cups Classic homemade hummus or store-bought high quality hummus
  • 1 pint cherry tomatoes
  • 1 a handful of fresh basil leaves
  • 1 a handful of fresh chives
  • 1 small shallot (optional)
  • Kosher salt

  1. Preheat an oven to 450F.
  2. In a large mixing bowl, combine rye flour, whole wheat flour, kosher salt, and baking powder and mix well. Add olive oil and water and stir until coarsely combined. Turn out onto a floured work surface and knead several times until the dough is smooth. If the dough is very sticky, add a little more flour.
  3. Divide into two equal balls.
  4. Place a dough on a lightly floured surface. Using a rolling pin, roll out a dough into a large oval, very thin, just under 1/8 inch (the shape can be slightly irregular and free). If the dough sticks, dust lightly with flour and continue rolling (if necessary, turn the whole dough over and continue rolling.) When the dough is rolled out, place the dough on a baking sheet (roll out half on the rolling pin and place carefully). on the baking sheet) Prick the dough with a fork all over the surface to avoid bubbles.
  5. Cook for 7 minutes*, then remove from the oven and flip. Bake an additional 5-7 minutes, until lightly browned and crispy on the outside (ours took 14 minutes total for perfect crispiness). If it’s not slightly crispy, flip it and continue cooking for a minute or two until crispy. Remember that all ovens are different, so keep your eyes peeled! The goal is for the flatbread to be lightly browned and crunchy around the edges: it shouldn’t be soft and pliable (undercooked and it will become chewy when served) or dark brown (overcooked and it will crack when served). cut).
