This apple galette recipe is an easy version of apple pie! Apples and pomegranate seeds are beautifully arranged on a flaky, free-form, whole-wheat crust.

We cooked! If you know us well, you know that we’re not very good at baking. But this year, inspired by creating a Thanksgiving menu, we decided to create a dessert worthy of a special meal. And what we came up with is a free-form apple pie: this apple galette. It’s easier than a cake: and prettier, you might say! Read on for the apple galette recipe.

How to make an apple pancake

Our vision for this apple galette was something light and fresh! We wanted an apple recipe that wouldn’t be too difficult after a long meal, but still special enough to round off an elegant evening. We created this Apple Galette – a free-form pastry crust filled with sliced ​​local apples and a filling of pomegranate seeds. It is sweetened only with a little honey and the natural sweetness of the fruit. Cinnamon ginger candy apples and pomegranate seeds are sweet and slightly tart, a lovely leaf with a flaky, salty crust.

The hardest part of any cake is the crust! (For a standard pie, here’s our homemade pie crust recipe.) Here we used our whole wheat pie crust recipe. It’s perfectly flaky but has the flavor and added nutrients of some whole wheat flour. For this apple galette recipe, simply roll out the dough into a circle. Then add the toppings, fold the dough over and off to the oven! There is no need to use a pie pan or flute the crust like other types of pie recipes.

This apple galette is a pretty healthy dessert as far as desserts go: the pieces are small and naturally sweet. Plus, it’s a lot of fun, especially when you have a little help from a friend or family member! This apple galette recipe is an easy version of apple pie! Apples and pomegranate seeds are beautifully arranged on a flaky, free-form, whole-wheat crust.


  • 1 whole wheat pancake batter
  • 1 grenade
  • 3 medium and firm baked apples (Jonathan, Granny Smith, etc – we used Jonathan)
  • 1 teaspoon lemon juice
  • 2 tablespoons honey or maple syrup
  • ½ teaspoon Cinammon
  • ½ teaspoon ground ginger
  • 1 pinch of kosher salt
  • 1 Pinch of freshly grated nutmeg
  • ½ tbsp butter without salt

  1. Before assembling the cake, prepare (or prepare and freeze) the whole wheat pancake batter.
  2. Preheat oven to 375°F. Remove the seeds from the pomegranate and reserve ¼ cup of the seeds. Cut 3 unpeeled apples into ⅛ inch slices.
  3. In a bowl, combine apple slices, lemon juice, honey, cinnamon, ginger, kosher salt, and freshly grated nutmeg. Stir gently to combine.
  4. Line a baking sheet with parchment paper. On a floured surface, roll out the dough into a rough circle about 12 inches in diameter. Place the dough on the parchment paper. Arrange the apples in a large circle on the dough, overlapping and leaving about 1 inch around the edge of the dough. Make several small circles of apples, reversing direction after each one and working towards the center. Scatter the pomegranate seeds over the apples. Fold the edges of the pastry over the apples.
  5. Melt the butter and brush the dough and the apples with it. Bake until crust is golden brown, about 40 minutes. Allow to cool for a few minutes before serving.
