All you need for this plant are three ingredients simple syrup: and you probably have most of them on hand! It’s a great way to use summer herbs at the end of the season. You will need:

  • Sugar
  • Water
  • Sprigs of fresh rosemary

How to make simple rosemary syrup: some tips

The concept for simple syrup that’s good, easy! There are many different herbs and flavors that you can add. Here is the basic requirement for making rosemary simple syrup (or jump straight to the recipe below):

  • Use equal parts water and sugar. All you need is half a cup each. Of course, you can get a bigger prize by using more. But we think this recipe’s 10 tablespoons are more than enough for a specialty syrup.
  • Bring to the boil with the rosemary, then remove from the heat and leave to rest for 20 minutes. This allows the flavor of the herb to penetrate the syrup. Try it after 20 minutes and you will be surprised how much flavor comes out! No need to go further (some recipes require hours of waiting).
  • Filter and cool. Filter the rosemary and voila! The syrup can be stored in the refrigerator for 1 month.

Before we begin, here is a list of the types of sugar that can be used simple syrup. Please pay attention to the following:

  • granulated sugar is the default option. It works better because it makes a light color simple syrup.

1. Rosemary spritzer (non-alcoholic)

Pour the cranberry juice and sparkling water into a glass and stir in the rosemary syrup to taste. Drizzle with a lemon wedge, if you like. Very easy!

2. Sparkling rosemary

  • 2 ounces vodka*
  • 1 ounce lemon juice
  • ¾ ounce rosemary simple syrup
  • 2 ounces sparkling water

Fill a highball glass with ice cubes. Pour in the vodka, rosemary syrup and lemon juice and stir several times. Pour sparkling water. Garnish with a sprig of rosemary and a lemon wedge. Head over to Rosemary Fizz for more.

3. Rosemary tendril

  • 2 ounces of gin
  • ½ ounce lime juice
  • ½ ounce rosemary simple syrup

Put the ingredients in a cocktail shaker. Fill with ice and shake until cool, then strain into a glass. (See Gin Gimlet for more.)

4. Rosemary Greyhound

  • 1½ ounces gin
  • 3 ounces freshly squeezed grapefruit juice
  • 1 to 2 teaspoons rosemary simple syrup

Fill a glass with ice. Pour gin, grapefruit juice and syrup into a shaker with 4 ice cubes and shake cold. Strain into the glass. (See Greyhound cocktail for more information.)

5. Ginger Bourbon Sour

  • 2 ounces of bourbon whiskey
  • 1 ounce lemon juice
  • ¾ ounce rosemary simple syrup

Pour all ingredients into a cocktail shaker. Top up with a handful of ice and shake until very cold. Strain the drink into a glass. Serve with ice cubes and a cocktail cherry. (See Bourbon Sour for more.)
