We’re always looking for a great salad here, and this one is simple and stunning. Try this refreshment romaine lettuce! The electric greens of romaine leaves, pastel dressing and soft pink radishes create a cool monochromatic effect that looks as good as it looks. The Green Goddess Dressing smothers everything in herbaceous smoothness. Sprinkle with a pinch of crunchy breadcrumbs, a brilliant alternative to croutons. The best innovation to replace croutons? Breadcrumbs on Salad! Lately we’ve all been tossing our salads with a sprinkling of panko. It brings a crunchy texture that spreads with every bite, and it’s so easy (and very stable). Here are some notes on panko and Italian panko:

  • Panko is a Japanese-style mix of breadcrumbs which is airier and lighter than conventional breadcrumbs. It has a crunchy texture that goes better with salads (the breadcrumbs are much finer with an almost sandy texture).
  • “Italian” means that herbs and salt are added. You should be able to find Italian panko or panko easily at your local grocery store.
  • You only have regular panko? Mix ½ cup panko with ⅛ tsp kosher salt and ½ tbsp Italian seasoning (or 1 tsp dried oregano and ¼ tsp dried basil and thyme).

  • 2 Roman hearts (approx. 8 cups chopped)
  • 2 Radishes, thinly sliced
  • 1 Shallot, thinly sliced
  • ½ cup Green Goddess Dressing (or coriander sauce for vegans)
  • ¼ cup Italian Panko*
  • Parmesan shavings for garnish (optional)

  1. Chop the Roman hearts. Thinly slice the radishes and shallot.
  2. Prepare the green goddess dressing.
  3. Arrange the romaine lettuce on salad plates or a large platter. Garnish with radish slices, shallot and Parmesan shavings. Drizzle with vinaigrette and sprinkle with Italian panko.
