It’s spring and my mind is ripe for exciting possibilities: You can grow tomatoes! Organize pizza nights on the deck! Campfire and S’mores! Lazy walks to get ice cream! I feel like a crocus sticking its head out after a long hibernation. I’m also dying for fresh summer flavors that won’t arrive for several months, but a girl can dream, right? This salsa was born from those summer dreams. But instead of using garden-fresh tomatoes (we still need at least 4 months here in Indiana), we used canned fire-roasted tomatoes. The taste is fantastic and just what we needed to get out of the winter doldrums. Read on for this roasted tomato salsa recipe!

How to make roasted tomato salsa

Roasted Tomato Salsa sounds like roasting tomatoes for hours, doesn’t it? Not for this roasted tomato salsa! In this recipe we used canned fire roasted tomatoes. Fire roasted tomatoes have a sweeter, more distinct flavor than canned tomatoes. When making this salsa please use fire roasted tomatoes! These days, they’re pretty easy to find in the grocery store. Our favorite brand is Muir Glen.

An interesting part of this roasted tomato salsa recipe is to char Anaheim peppers over an open flame on your stovetop. It’s not required, but it adds a twist to an already delicious dip. We’ve also provided instructions on how to make your own homemade tortilla chips – they’re easy to make and taste fabulous. Depending on how these chips are made, they might be a bit healthier than store-bought, but we like to make them at home just for the novelty. This is a fun project to do with family or friends.

How do I store this salsa? You can keep it in the fridge for up to 1 week. You can also freeze it to extend its shelf life! Put it in an airtight container and freeze it for a few months. Thaw at room temperature or in the refrigerator. Some of the liquid will separate after freezing, so just stir it in to get it back into the salsa. It’s like new!

This roasted tomato salsa is bursting with summery flavors and is made with a secret: canned fire-roasted tomatoes! It’s a winner in every season.



  1. Remove the heads and seeds from the Anaheim peppers. Roughly chop the red onion. Peel 2 cloves of garlic. Cut the jalapeño peppers in half and remove the seeds (leave the seeds and/or use the whole jalapeño peppers for a hotter version). Squeeze 1 lime.
  2. Grill the Anaheim peppers, placing one over an open flame and heat until almost charred, turning frequently, less than 1 minute per side.
  3. Place all ingredients in a blender or food processor and pulse until combined but still slightly thickened. Store in the refrigerator for up to 1 week (can also be frozen for several months: thaw and stir to recombine the liquid).
