  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • Freshly ground black pepper
  • ½ cup grated Parmesan cheese (omit for vegans)
  • sour cream sauce, for serving (optional)

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Wash potatoes, then pat dry. Cut them into 1/2-inch cubes (if you’re using small red potatoes, you can cut them in half).
  3. In a large bowl, mix together the potatoes, olive oil, garlic powder, kosher salt, and some freshly ground black peppercorns.
