But if you want to dress up your carrots as a crazy tasty side dish: make these easy Roasted Carrots! They are tender, slightly charred and gently earthy. Yes, this recipe is for the bag of carrots you find in the store! Alex and I wanted to make a recipe for the most common and cheapest carrots you can find. They are roasted into a wonderfully flavorful and healthy side dish.

There are also long, thin carrots that are sold in bunches, often in rainbow colors. If you have those carrots, opt for the roasted cumin carrots. Because they’re thinner, you can roast them whole or cut them in half, and they spend less time in the oven!

How to Roast Carrots (The Basic Steps)

Carrots take about 40 minutes to roast as they are a very tough vegetable. They’re up there with yams and beets. But it is 100% worth doing! They come out tender and even sweeter, like a delicious whole plant-based (WFPB) side dish. This recipe plays up the flavor with a touch of lemon shine and balsamic vinegar. Here’s some basic info on how to roast carrots (or go straight to the recipe):

  • Peel carrots and cut diagonally. Who wants carrot sticks when you can have elegant platters? Slice the carrots diagonally (at an angle) to get those cute shapes.
  • Mix with spices. You can fry carrots just with olive oil, salt and pepper. But to enhance the flavor even more, we added balsamic vinegar, Dijon mustard, garlic powder, and dried thyme.
  • Roast for 35-40 minutes until tender! Roast at 400 until nice and tender. That’s it!

A tip: Roast with lemon wedges! (You can do this for any vegetable.)

Here’s Alex and my tip on how roasted veggies taste amazing. Throw a few lemon wedges directly onto the veggies while they’re roasting! Frying these carrots with lemon wedges gives them that wonderful flavor while cooking. They come out with a subtle spicy flavor. You can do this with any veggies to capture the lemon burst.

Some examples? Try roast potatoes with rosemary or roasted asparagus: they are also cooked with lemon!

These easy Roasted Carrots are the best way to add AMAZING flavor to this healthy vegetable! Cook until soft with lemon wedges and fresh thyme.


  • 2 carrot pounds (ten at 12 medium to large carrots)
  • 1 tbsp balsamic vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 3 tablespoons olive oil
  • Sprigs of fresh thyme, optional
  • 4 lemon slices

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Peel the carrots and cut diagonally (as shown).
  3. In a large bowl, whisk together the balsamic vinegar, mustard, garlic powder, thyme, and salt. Stir in olive oil slowly. Add the carrots and toss to coat well.
  4. Line a baking sheet with parchment paper. Add carrots in an even layer. Scatter lemon wedges and fresh thyme over the carrots on the plate.
  5. Fry for 20 minutes. Stir and fry for an additional 15-20 minutes (35-40 minutes total) depending on the thickness of the carrots. Taste and add a few more pinches of salt and some freshly ground pepper. Surcharge.
