Tips for Roasted Brussels Sprouts with Garlic

For this Roasted Brussels Sprouts with Garlic and Parmesan, we tested our convection oven setting as well as a standard oven setting. It turns out that a The convection oven is ideal for preparing crispy Brussels sprouts! The texture using this method turned out to be crispy on the outside and tender on the inside. Of course, the standard oven method was also excellent (and very close). Use every setting you have access to! Here’s what you need to know:

  • Use 1 pound Brussels sprouts per baking sheet. The maximum you can get on a baking sheet is 1½ pounds. But do not use more: the distance between the brussels is important to make them crispy.
  • Fry on a baking sheet lined with parchment paper. Silicone mats can soak Brussels. For this recipe, place them cut side up (we usually place them side down, but this one is different!).
  • Roast at 400 degrees for 23-27 minutes (standard) or 15-20 minutes (convection). We typically roast Brussels sprouts at 450 degrees, but the lower temperature helps ensure the garlic doesn’t burn.

Keep other pans out of the oven

If possible, try to keep other pans of food out of the oven while you prepare garlic roasted Brussels sprouts. More food adds surface area and moisture, which can make them mushy and increase cooking time. Of course, this is not always practical! But we’ve had them come out wet when trying to cook other foods at the same time.

  • 1 Pound Brussels sprouts (stalkless), halved
  • 5 chopped garlic cloves
  • 2 tablespoons olive oil
  • ¾ teaspoon kosher salt
  • Freshly ground black pepper
  • ¼ cup grated parmesan cheese

  1. Preheat the oven to 400 degrees Fahrenheit (use the convection setting if you have it).
  2. Prepare Brussels sprouts and garlic as described above. Place them in a large bowl and toss them with the olive oil, salt, pepper, and Parmesan cheese until well coated.
  3. Line a baking sheet with parchment paper. Place the Brussels sprouts in a single layer, cut-side up, on the baking sheet.
  4. Roast for 23-27 minutes (on standard oven setting) or 15 to 20 (on convection oven setting) until golden and crispy on the outside and tender when pierced with a fork. Taste immediately.
