These Dill Roasted Apples and Cauliflower are a tasty, sweet and savory side dish that’s weeknight friendly and fun!

The magic of *grilled vegetables* was one of my favorite discoveries when we first got into cooking. I didn’t like raw cauliflower back then, but the roast was a different thing altogether: a rich, almost buttery goodness that I couldn’t help but spit back into the roasting pan. Can Roasted Vegetables Be Considered a Pathway to Nutritious Food Consumption? Eating them is one of my earliest memories of realizing that healthy foods can be absolutely delicious. Speaking of delicious, this baked apple and cauliflower recipe makes veggies taste great candy.

Roasted apples and cauliflower

This cauliflower and dill baked apple recipe is one of our old favorites that we first made as a Thanksgiving cauliflower recipe! It’s so, so delicious: the sweet red onions and apples are the perfect contrast to the savory cauliflower, which is punctuated by the refreshing and aromatic fresh dill. It’s sure to be a family favorite. If you try it, be sure to get your hands on some fresh dill; It’ll probably have to be bought at the store since the Indiana growing season is now over, but it’s definitely worth the money.

Baked apples and cauliflower are a tasty, sweet and savory side dish that caters to a variety of diets (vegan, dairy-free, gluten-free). This recipe takes about 50 minutes to prepare, but time is usually limited. And for the taste, it’s worth every minute of waiting. We also like the color rendering: the purple of the onion, the almost bright pink of the baked apple and the green of the fluffy dill leaves.

These Dill Roasted Apples and Cauliflower are a tasty, sweet and savory side dish that’s weeknight friendly and fun!


  • 1 large cauliflower (2¼ pounds whole; 7 cups chopped)
  • 1 big red onion
  • 2 crispy tart apples (e.g. Honey Crisp, Jonathon or Jonagold, Granny Smith, Gala or Fuji)
  • 2 tablespoons fresh dill (do not substitute dried)
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • Freshly ground black pepper

  1. Preheat oven to 450°F.
  2. Divide cauliflower into florets (see video below). Slice the onion. Core the apples and cut into bite-sized pieces, leaving the skin on. Roughly chop the dill.
  3. Place cauliflower, red onion, and apples in a large bowl and toss with olive oil, kosher salt, and plenty of freshly ground pepper.
  4. Line a baking sheet with parchment paper. Place the chopped vegetables on the baking sheet, then roast for 30-40 minutes until the cauliflower is tender and lightly browned, stirring twice during the cooking time. Remove from the oven, stir in the dill and arrange on a serving platter. Serve immediately.
